Cocoa Pebble Treats

Thanks to Post Cereal for sending the goodies to create this recipe!

We love snacks made with cereal. Last week my little boy, Roo, sweetly took my hand to lead me to the kitchen. He then hopped up on a stool and said "Make Cookies Mommy!"

I am easy to persuade when it comes to my son. So I agreed, but cookies we would not be baking. Cocoa Pebble Treats sounded like a yummier option.

You will need 1 cup of chocolate chips (I used milk, dark and white)
6 cups of Cocoa Pebbles
10 ounces of marshmallows
1/3 cup of butter


Sprinkle 1/4 cup of chocolate chips into the bottom of a 13x9 baking dish

Pour Cocoa Pebbles into a large mixing bowl

Melt butter over medium heat and add marshmallows. Stir until they have melted.

Pour butter/marshmallow mixture over Cocoa Pebbles

Stir well

Add remaining chocolate chips and stir well.

Spread into the 13x9 pan and allow to rest for about 40 minutes. Cut into squares, serve and enjoy. Store leftovers in a zipper seal bag.

                 My son Roo is playing t ball this year- which is adorable! We are getting ready for our first game this week. Harper is trying to crawl, she can go backwards. Working on forwards!

We may or may not have adopted another cat.... she is inside asleep on the sofa but I keep saying "She isn't our cat..."

Easy Egg Bake

  Chef Jack Witherspoon and Tasteful Selections™  have teamed up to create recipes and videos featuring Tasteful Selections specialty potatoes to support Jack’s cause to find a cure for leukemia and encourage kids to eat healthy. 

Chef Jack, The inspirational 13-year-old chef began cooking to benefit research at the age of 6, during recovery from leukemia.  He was first diagnosed at 2 years old, and has relapsed twice since, but continues his passion of cooking for the cause.

I had the pleasure of creating a recipe with Tasteful Selections Sunset Medley potatoes. I am absolutely crazy about these cute little taters! Let me tell you a little about them:

This is what I whipped up using Tasteful Selections.

Easy Egg Bake

You will need:
1 can of mushroom soup (I used Progresso)
4 slices of bread, cut into cubes
4 eggs 
2/3 cup of shredded cheddar cheese
1/2bag of Tasteful Selections Sunrise Medley potatoes, quartered
1 cup of sausage or bacon, crumbled


Begin by preheating your oven to 350 degrees

Spray a 9x13" baking dish with non stick cooking spray

Place the quartered potatoes in the baking dish



In a medium size bowl mix the eggs and the mushroom soup together

Pour this mixture over the potatoes

Add the 4 slices of bread, cubed to the top of the egg/soup mixture

Add the breakfast meet of your choice

Sprinkle with cheese and cover with aluminum foil.

Allow to bake for 30 minutes then test the dish by piercing the center with a knife to judge if the dish has baked adequately much like baking a cake. 

My family thought this was yummy. It was very easy to make. We added salsa to our Easy Egg Hotdish to incorporate some veggies too.



I got the top a little bit too brown, but such is life in a houseful of small children.

Saturday #204

On Saturday #204 (24 for Harper) my son was excited! He had his first ever baseball practice. The morning was beautiful so we walked over to the park together. Roo was thrilled to be at baseball playing with other boys. After practice we played at the park until Roo was hungry.

After lunch we decided to venture out again. Roo needed a batting helmet. We found a tee thing for him to practice with and a wooden bat as well. He is all set for tee ball.

We decided to buy his birthday present early, a big swing set is sitting in a shop with my name on it. I just have to pick it up. He is going to love it! Our plan is to assemble it while he is sleeping, then let him venture outside to play on his birthday and find it.

After shopping for Roo's big 4th birthday and his new adventure in tee ball we went home. I had shopped my heart out. Maybe I should rename this series 940 Saturdays the Shopping Edition? It seems like that is how we spend our weekends....

Sushi Sensory Bin

A few weeks ago while shopping at my Kroger I saw these adorable erasers- sushi style- in the clearance section. At 69 cents they were a steal. I couldn't pass them up! My husband said "What are you going to do with them?".

What am I going to do with them? Make a sensory bin of course! A Sushi themed sensory bin sounded like fun to me!

I picked up a bag of long grain white rice, one pound was on sale for $1.09. I used this as my base.



My son was intrigued. He couldn't wait to get his hands in the bin of rice!

Next we added our Sushi Erasers.


Again, Eager Hands were grasping to get involved. Not that I can blame him!

Finally, we finished the bin off with a pair of chopsticks.


And there you have our under $2 sensory bin! It was easy to make and fun for Roo to play with.

I liked that we could enjoy the feeling of rice when we touched the bin, the rice was fun for roo to dig around in. He likes the way it sounds when he picks up a handful and drops it in the bin. The chopsticks are great for his fine motor skill development.

When he grew tired of picking up the erasers with the chopsticks he fed rice to an assortment of dinosaurs. Then he decided to toss handfuls of rice into his barnyard toy for the other animals to eat... and yes, it got messy. But, I went with it! After all this was my big idea of fun and dried rice is pretty easy to sweep up.

Saturday #203

On Saturday #203 (#23 for Harper) I woke up and said "Enough is enough!" My bed had to go. I set my mind on one goal... buying a new mattress. My back was sore, my shoulders were sore. I was waking up at least 5 times a night. Our mattress was only 3 years old, but sleeping on concrete was more comfortable than climbing into bed. That is a true story.

My dear husband tried to talk me out of it, but he did so knowing that after the accident in our bed courtesy of the stomach flu my little boy had, he would never sleep in it again... nor would anyone else for that matter, as I had made the attempt to sleep in it the night before and did not enjoy the experience or the smell, so his frugal attempt fell short. After he tried the bed we ended up buying his speech about saving money abruptly ended and he sighed happily.

We decided to visit Hobby Lobby. I had not visited Hobby Lobby in years. Honestly the experience was not at all satisfying. I found everything was ridiculously more expensive than at Jo-Anne, the selection was very limited and the layout of the store is terrible. I did purchase several Safari LTD Toobs for sensory bins and a few crafts to do with Roo, but I grumbled over how expensive my tiny bag of goodies was.

That was the day in a nutshell, typical. Filled with spending too much money. Considering I am a few weeks behind on my 940 Saturdays update, I will say I am not complaining. A new bed was money well spent, and I had a ton of fun shopping for beds with the family. Roo was hilarious trying out all of the beds,

Confetti Pancakes

Do you know who I am loving? The good people at Post who sent me cereal to get creative with.

I asked my son Roo, who is 3, what he wanted for dinner and he said "Pancakes!" That is easy enough, a request I was glad to honor. But anyone can make plain old pancakes. If you are looking for a great pancake recipe that is full of color and fruity flavor keep reading!
Confetti Pancakes

To make Confetti Pancakes you will need:

3/4 cup milk
 2 tablespoons white vinegar
 1 cup all-purpose flour
 2 tablespoons of sugar in the raw
 1 teaspoon baking powder
 1/2 teaspoon baking soda
 1/2 teaspoon salt
 1 egg
 2 tablespoons butter, melted
 3 cups of Post Fruity Pebbles lightly crushed
 cooking spray

Mix vinegar and milk in a mid size bowl. Allow to sit for 5 minutes.

Combine sugar, baking powder, flour, baking soda and salt in a large bowl.

In the milk/vinegar (soured) mixture, add egg and melted butter. Mix well. Pour this mixture into the large bowl of dry ingredients, mixing until the batter is smooth. Add Fruity Pebbles and stir.

After using the cooking spray, heat a griddle or a large skillet over medium heat Pour 1/4 cup of batter onto the griddle/skillet and cook until bubbles appear on the surface. Flip with a spatula and cook until golden brown.

So, these are pretty pancakes right? But the important thing is how do they taste? I asked my son if he liked them and he declared they were better than birthday cake. Out of the mouths of babes right?

Tips for Visiting New York

With a population of over 8 million people, New York is the largest city in the United States. It is also one of the most popular tourist destinations in the world. Many people are scared when traveling to the Big Apple for the first time. Here are some guidelines that you may want to follow to make things go more smoothly.

Don’t Be Skittish

New York has a stereotype of being one of the most dangerous cities in the world. Although the city does have its share of crime, it is actually a lot safer than most people think. In fact, Neighborhood Scout doesn’t even rank it as one of the 100 most dangerous cities in the country.
In general, you don’t need to be nervous about traveling in the city. There are some areas that are more dangerous than others. For example, you may want to be extra careful traveling through the Bronx, while most of Manhattan is pretty safe. Learn How to Navigate the City

While the city is a lot safer than people give it credit for, New York can also be a stressful place to travel. You will want to look at a general map of the city while trying to get around. Choosing the right transportation is also very important. You would be surprised by how quickly you can get tired while walking around the city. Eat Out Wisely

There are over 4,200 restaurants in New York City. Some of these eateries are among the finest in the world.
You may be tempted to eat out at some of the city’s finest restaurants. However, you will need to be careful if you are on a tight budget. Here are some ideas that you may want to try if you need to save money:
  • Try some of the great cuisines in Chinatown.
  • Eat some of the thin crust pizzas from local vendors.
  • Look at some of the humbler delis in the city.

Visit the Smaller Shopping Plazas

New York has a number of very popular shopping centers. While these places can be very exciting to visit, they can also be very expensive and have large crowds. It is definitely worth checking out the smaller shops instead.
You can find a number of great boutiques on the lower east side of the city. You can also find some great artistry places in Brooklyn. These places tend to have much better prices than Macy’s or the shopping centers around SoHo. You also won’t have to fight the crowds.

Pretty Pebble Marshmallows

I was really excited when Post sent me some fun supplies to create this recipe

My family loves cereal and we love gourmet marshmallows, so I combined two of our favorite things to create a fantastic treat that is colorful, sweet, easy to make and fun to eat.

If you need a quick sweet treat or if you want to make someone something very memorable, Pretty Pebble Marshmallows will work perfectly!



You will need:
1 bag of white chocolate chips
1 bag of jumbo marshmallows
1/2 cup of Fruity Pebbles

Place 1/2 cup of Fruity Pebbles in a zipper seal baggie. Use a rolling pin to crush the cereal. Pour the crushed pebbles into a small bowl.

Spray a microwave safe bowl with cooking spray. Pour in the bag of white chocolate chips. Microwave in 30 second increments. Stirring every 30 seconds until the chips have melted and blended smooth.

Using a skewer or a fondue fork dip your marshmallows into the melted white chocolate, then dip into the crushed cereal, repeat until you have depleted your white chocolate or marshmallows. Allow to dry before serving, about 30 minutes. Store leftovers in a zipper seal baggie for freshness.

Double Chocolate Covered Marshmallows

Fancy Marshmallows are kind of becoming my thing. They are easy to make and they are always a hit with the crowd. 

If I have had a busy day and I didn't have time to bake or no bake something, I can whip up a few pretty marshmallows in 5 minutes flat and enjoy the oohs and aahhs from my family when I serve them.

Tonight I made a half dozen of double chocolate covered marshmallows.

This is so easy anyone and I mean anyone can make them.


You will need:

Large Marshmallows
Mini Chocolate Chips

I used 1/4 cup of mini chocolate chips for the first coating and 1/4 cup for the second coating.

Place 1/4 cup of chocolate chips into a small dish, set aside for a moment.

Spray a very small microwave safe dish with cooking spray. Add 1/4 cup of chocolate chips. Microwave for 30 seconds, then stir. Microwave for 30 additional seconds and stir. If the chips blend smooth upon the second stirring it is ready. If not, microwave for 15 seconds and stir, repeating as needed.

Dip your marshmallows into the melted chocolate then into the mini chocolate chips. Place on a plate and repeat until you run out of marshmallows or melted chocolate.

Allow the marshmallows to rest for about 30 minutes until the chocolate has hardened. Serve with a smile, store leftovers, on the odd chance there are any, in a ziploc baggie.

940 Saturdays: Saturday #202

On Saturday #202 (#22 for Harper) we had no fun plans for the morning/afternoon. The kids and I were up early as usual. We played, we made a huge mess, we enjoyed a go with the flow kind of morning. At lunch time I realized yet again, someone needed to go to the grocery store. Ever since our double door fridge bit the dust and we downgraded to a regular old tiny model it has been a challenge to keep groceries in house. I really miss the every 3 week shop. Going every week frustrates me.  The thought of dragging both kids into a busy grocery store sounded on par with a root canal. Putting my awesome parenting skills on display I held my head high as I fed my son a kids meal from Wendy's and pushed the grocery shopping off a little bit longer.

Adam bathed the kids while I gave the house a frantic attempt at getting clean. I rushed as fast as I could to  load the dishwasher, start a load of laundry, pick up toys, pack a diaper bag and lay out clothes. The kids were off to the sitter for a few hours. My husband and I were going to dinner to celebrate his new job. He is now the librarian in one of the schools on campus in our little town. {Yay Mr. Adam!}

We planned to go to a little Italian place. We arrived early, it was cold. There was a line extending outside of the building. Waiting time was about 40 minutes. We decided not to spend the evening in line, we went to Red Lobster instead, we were seated immediately.

Drinks were ordered, we both decided on lobster. This was the first time my husband and I have been without kids in almost 4 years... so we sat there silently. He began to occupy himself with his phone. I sat there feeling like I could be somewhere else, doing something else.

After a dinner of mostly silence (conversation only when the waitress appears and chats with my husband) to keep with the fantastic vibe of the date night my husband followed our dinner with a trip to WalMart.

I went home very disappointed. Needless to say I will not be asking my husband on another date anytime in the near or distant future. He can make the effort next time and I will be mature enough  to not only speak to the server. But I may play with my phone the whole time ;0

My Saturday kinda stunk really but that is okay they can't all be fabulous! I hope you enjoyed time with your family over the weekend.

In The Sky Sensory Bin

Roo loves waking up to find a new sensory bin waiting on him! I love making something fun for him and knowing he will happily play with this new bin for a few hours. I got a great deal on a Toob from Safari LTD and I couldn't wait to make the In the Sky Sensory Bin.

I started with a base of Easter paper grass stuff and a few cotton balls.


I pulled the cotton balls apart slightly to fluff them up a bit.



Gently pull your cotton ball apart until it looks like a fluffy cloud.



Next add a handful of planes and balloons- or a toob (In the Sky).


And you have a neat sensory bin for kids that incorporates fun with their senses. The paper Easter grass and the cotton ball clouds offer different textures to feel. The paper grass engages the sense of hearing as it crinkles when touched. The colorful blue base engages the sense of sight with a visually appealing color. The planes open the doors to imaginative play.


Roo liked this sensory bin. He was amazed at the planes inside and he caught on quickly that the bin was the sky. He excitedly showed me all of the clouds, several planes and the paper grass which he thought was pretty neat stuff. After about an hour of playing planes he smiled and picked out a few dudes and told me it was bubble bath time! The In the Sky Sensory Bin can double as a bubble bath sensory bin in the imagination of a child.

How to Save a Broken Fingernail

One of the first things people ask me these days is "Are those real?"

Yes, my fingernails are real. (For the record so are my breasts just so you don't get the wrong idea!)

Women always ask me how I grow my nails, what technique do I use? Do I take a supplement or use a special polish? The answer is I don't use anything to grow my nails. There is no technique. I have long nails because I have patience and willpower. The urge to pick, peel and chew my nails is strong and ever present. But I resist, I refuse to tear my nails up. Therefor, they grow. Pretty simple.

It also helps that I have become a master at saving a fingernail when it may break. Let me share my knowledge with you. You too can have really long nails!


First, keep a nail file near by at all times. If you snag a nail, smooth it out right away to avoid peeling and chipping.

If you notice that your nail is splitting, cracked or torn, stop what you are doing immediately. Now is the time to act fast and pull out your secret weapon. You should keep this accessible at all times because you never know when your nails will need to be rescued.

Your secret weapon is.... ta da- Super Glue.

This is so easy. Your nail will be saved! It only takes one second.

Where the nail is weak (torn, chipped, cracked etc) place a drop of super glue. Smooth it out to cover the area in danger of breaking. Let it dry. Resume normal activity.

It is really that easy! 

3 days ago I jammed my finger into a doorknob and my pinkie fingernail somehow got stuck in the lock part of the doorknob. I carefully slipped my nail out and ran- ran to my super glue. The nail was halfway broken and the break was of course below the quick. I knew this was going to be a painful break if I didn't act fast.

In under 30 seconds my nail was as good as new! It didn't break! After gluing the nail back together you should paint over it. I would advise using the color you have on your other fingernails. You might want to keep this color for a few weeks as I would recommend reinforcing the break with super glue again in several days. I don't think you would want to remove the original polish or the glue on top of it as you will probably break the nail.

I have read that other people suggest snipping the edge of a tea bag off to place over the glue, but really, you don't need to do this. That is time spent that might lead you to lose the nail, seriously slap one dot of super glue on it. Let it dry then repaint the area.

As you can see in my photo I didn't paint right away so that I could show you how bad my nail tear was- it was 2/3 of the way across my nail. This was a serious break, but I acted fast enough to keep my long nails! Tell me about your nails. Are they long? Short? Painted? What is your favorite nail polish?

Nuts About Cookies Bark

When you have a very busy child underfoot and an infant to contend with the chances of baking a cake from scratch are slim to none. Too often dinner comes from the freezer or sadly it comes home in a brown bag and Styrofoam containers. Dessert? Think stale cake from the bakery. Plastic wrapped cookies. Yeah. I never claimed to be the perfect wife or mother. I seriously lack in the cooking department if you are seeking home cooking or from scratch cooking. Instead of beating myself up about not being June Clever, I realized that I don't have to make everything from scratch. This inspired me so I started playing around with ingredients I had on hand and I came up with a yummy dessert that took less than 5 minutes to create.

I came up with Nuts for Cookies Bark. It was nothing short of awesome! To create Nuts for Cookies Bark you will need:



10-18 crushed oreo cookies (I broke mine into chunks)
1/2 cup od pecans, crushed
1 bag of semi sweet chocolate chips


Spray a microwave safe bowl with cooking spray. Pour chocolate chips into the bowl and microwave, stirring every 30 seconds until the chips are melted and can be stirred smooth.


While the chocolate chips are melting, place half of the cookies and nuts into the bottom of a container, you could use a baking dish or a cookie sheet. Pour the melted chocolate over the base. Top with the remaining cookies and nuts.


Allow to cool at room temperature for about an hour. Then cover with plastic wrap and place in the refrigerator for about 2 hours so that the bark will set and harden properly.

Before serving, allow to set at room temperature for a few moments. Break into chunks and serve.

 Last week I was thinking about whipping up a batch of Rice Krispie Treats when it dawned on me that I could use the same recipe and use a different cereal. Wow! What a game changer. I made a batch of Fruity Pebble Treats and my family went wild for the new twist on an old favorite!

This recipe is super simple. There is no baking involved.

You will need:
6 cups of fruity pebbles
10 ounces of mini marshmallows
3 tablespoons of butter

Melt your butter over medium heat.
Add marshmallows, stirring frequently until they are melted.
Remove from heat.
Add fruit pebbles, stirring so that all of the cereal is coated.
Place in a 9x13 baking dish (ungreased)

Allow to cool and set for about an hour then cut into small squares.

As you can see in the photo I made mine thinner than most people probably would, but I wanted to have manageable cereal snacks for my son who is 3. By thinning my cereal snacks down (I used a 9x13 and an 8x8 baking dish) I created something he could chew easier.

These are colorful, they smell fantastic, they are sweet and fun to eat, they were very easy to make and best of all they are a lot healthier than many other options I could have purchased prepackaged.

Silly Slushie and a Giveaway from Blue Chair Bay Rum

I love pineapple. It is versatile and incredibly delicious. How many other foods can you think of that make a yummy pizza topping, a perfect addition to a decadent dessert, a refreshing beverage and taste like a little chunk of heaven on its own? Pineapple is so fabulous it has earned a holiday of its own. {April 2}

In honor of the first ever International Pineapple Day I  had the honor of creating a drink with  Blue Chair Bay Rum (a collection of premium-blended rums by singer-songwriter Kenny Chesney) and pineapple. It is my great pleasure to share the recipe for a Silly Slushie with you. 






You will need:

An evening without the kids!
A Blender


1 1/2 cups of ice
1 can of sprite zero
12 ounces of Fuse Berry Punch
12 ounces of orange juice
1 can of pineapple slices with juice
8 ounces of Blue Chair Bay White Rum

Combine all ingredients in a blender. Blend for 1 minute. Serve immediately.

Your tension and stress will melt away instantly. After a few of these Slushies for grown ups you will be feeling rather silly, guaranteed.

This drink has a fruity flavor with a tropical vibe and the sprite zero makes it fun and fizzy. I love the grown up feel this slushie has. My husband normally wouldn't partake in a pink "girlie"drink but I twisted his arm and convinced him to try a small sample, he said "Wow, this is good!" and we drank a few pitchers of these.


A side note: I couldn't resist trying a shot of Blue Chair Bay Rum before preparing the Silly Slushie. It had a smooth flavor and it really grabbed a hold of me! I will be looking for this brand again soon!
