Chef Jack Witherspoon and Tasteful Selections™ have teamed up to create recipes and videos featuring Tasteful Selections specialty potatoes to support Jack’s cause to find a cure for leukemia and encourage kids to eat healthy.
Chef Jack, The inspirational 13-year-old chef began cooking to benefit research at the age of 6, during recovery from leukemia. He was first diagnosed at 2 years old, and has relapsed twice since, but continues his passion of cooking for the cause.
I had the pleasure of creating a recipe with Tasteful Selections Sunset Medley potatoes. I am absolutely crazy about these cute little taters! Let me tell you a little about them:

This is what I whipped up using Tasteful Selections.
Easy Egg Bake
You will need:
1 can of mushroom soup (I used Progresso)
4 slices of bread, cut into cubes
4 eggs
2/3 cup of shredded cheddar cheese
1/2bag of Tasteful Selections Sunrise Medley potatoes, quartered
1 cup of sausage or bacon, crumbled
Begin by preheating your oven to 350 degrees
Spray a 9x13" baking dish with non stick cooking spray
Place the quartered potatoes in the baking dish
In a medium size bowl mix the eggs and the mushroom soup together
Pour this mixture over the potatoes
Add the 4 slices of bread, cubed to the top of the egg/soup mixture
Add the breakfast meet of your choice
Sprinkle with cheese and cover with aluminum foil.
Allow to bake for 30 minutes then test the dish by piercing the center with a knife to judge if the dish has baked adequately much like baking a cake.
My family thought this was yummy. It was very easy to make. We added salsa to our Easy Egg Hotdish to incorporate some veggies too.
I got the top a little bit too brown, but such is life in a houseful of small children.
How do you like your Tasteful Selection Potatoes? Boiled, Baked, in a casserole?
We take a sauce pan with just enough water to cover the potatoes and salt it liberally. You know how they say your pasta water should taste like the ocean? Well, double that amount. Boil the potatoes until the water is pretty much gone and you end up with perfectly cooked, salt encrusted potatoes! My husband will sometimes add butter or sour cream with his, but they are really just perfect the way they are. I guess I'll have to do a blog post on them because I haven't made them in a VERY long time. :)

ReplyDeleteI love to bake. My favorite thing to cook though is my grandma's homemade vegetable chicken soup. So good!
ReplyDeleteMy favorite thing to cook is lasagna. So tasty too. My daughter gobbles it up as well so that's a plus.
