Mint Chocolate Chip S'mores

S'mores are a summertime staple for good reason. They are incredibly delicious! This recipe takes the tastiness up a notch with the addition of mint chocolate chip to the equation for a melt in your mouth campfire snack!

Summer is here and my kids have been begging to make s'mores. Last weekend they talked their Daddy into building a campfire for them and they looked at me with big eyes, hopeful. Do we have any graham crackers?

Well, we didn't. But that didn't stop us from smashing some delectable ingredients together and creating something incredible Mint Chocolate Chip S'mores are gooey, chocolate-y and have a hint of crisp coolness from the mint, making them perfect for summer!


This recipe is so easy. It was created based on availability of what was in our pantry. We had a pack of Smash Mallows lingering from Easter, some single serve Chips Ahoy and snack size Hershey bars. I picked mint chocolate chip marshmallow because mint is my thing lately. I don't know if Smash Mallows are a thing you can get anywhere. Ingredients per 1 S'more
2 Chips Ahoy Cookies
Smash Mallow Mint Chocolate Chip 
Hershey Milk Chocolate


Directions:
Place a Hershey bar on one chocolate chip cookie
Roast a smash mallow mint chocolate chip
Smash it on the chocolate bar
Top it with the other cookie.
Enjoy!

Blueberry Lime Soda

This blueberry lime soda syrup is so easy to make. It is perfect for a refreshing drink that you will want to sip all summer long!


We have a drink machine in the kitchen, and it is pretty great. I love making caffeine free soda to serve the family. It is fun to mix up a batch of syrup drawing inspiration from seasonal produce. This recipe came together with only 3 ingredients to create something sweet, tart and completely delicious!


After you make this, you might never buy a prepacked syrup for your soda stream machine again. This is so easy to make and tastes totally amazing! With only 3 ingredients and a few moments of time, this might be your new favorite.



Ingredients:
One fresh lime
2 cups of blueberries
2 cups of water
2 cups of sugar

Tools:
A mason jar or something similar for storing
A mesh sieve/strainer
A medium size saucepan


Directions:
Combine water, sugar and blueberries in a saucepan.
Over medium heat,  cook for about 30 minutes, stirring frequently.
Allow the mixture to cool for about 20 minutes.
Place the mesh sieve/strainer over the mason jar.
Pour the liquid into the sieve, allowing it to drip into the jar.
As you go, you will crush the fruit to drain the liquid. I use a small mason jar for this.

Allow to cool completely then store in the fridge for up to 3 weeks.


To use, add one to two ounces of syrup to your drink mate or soda stream with 12 ounces of water, then carbonate.

If you do not have a drink machine, no worries! Add this to sprite or carbonated water for a really delightful summer treat!

Brown Sugar Overnight Oats

Breakfast has never been easier or tastier than it is with this simple Brown Sugar Overnight Oats recipe.



Some of the best things in life are simple; this recipe embraces that and plays on the goodness of pantry staples. I love that you can literally toss this together in under a moment for a no frills, but tons of flavor start to the day.

Ingredients
1 cup of old fashioned oats
1 cup of 1% milk
1/8 teaspoon of vanilla
1 tablespoon of brown sugar

Instructions
Combine all ingredients in a food storage container. Allow to sit in the fridge for at least 3 hours. Overnight is ideal.
Serve cold, or heated in the morning for a nutritious and delicious breakfast.

This recipe will last for 3 days covered in the fridge.

Awesome Homemade Pancakes

This is such an easy and tasty recipe for fluffy, old fashioned pancakes. They have a rich flavor thanks to the addition of brown sugar and come out so fluffy and irresistible.

My kids would have pancakes for breakfast every morning if I had the time to make them! When they have a 2 hour delay for school, I like to start the day off on a sweet note with this homemade pancake recipe. You can double the recipe and freeze the leftovers between sheets of parchment paper for an easy to pop in the microwave breakfast for busy days too.

I like to top mine with bananas and crushed walnuts. One of my kids goes with liberal butter and syrup, and my other kid loves them plain. Top them however you like. Enjoy them golden brown and warm for the best flavor.




Ingredients

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon light brown sugar
1 1/4 cups milk
1 egg
4 tablespoons butter, melted

Directions
Mix together dry ingredients.
Add milk, butter and egg.
Mix well.
Allow to rest for 15 minutes in the fridge.
Heat a griddle or skillet on medium high heat.
Butter the cooking surface and spoon pancakes.
Flip when they stop bubbling and are golden brown.

The holidays are near and it is time to start planning for all of the yummy treats you will make and share. This year I have the easiest fudge recipe to share with you. It only requires 2 ingredients and a few moments of your time.

This recipe is perfect for anyone, any time! It can be whipped up to share or to satisfy a craving when it strikes!

I loved the simplicity of this recipe. You can of course add in other ingredients if you like, but it only requires two common pantry staples and a few moments of time to prepare. The hardest part of making this recipe is waiting on it to harden!

Ingredients:



In a small saucepan combine the condensed milk and the chocolate chips, over a low-medium setting melt until the chocolate chips stir smooth. This will only take a few moments, so pay attention to it!

Pour the melted chocolate mixture into a small buttered casserole dish and allow to cool, then harden.

Cut into squares and carefully remove from the dish. Package in an airtight container and share!

If you too suffer from seasonal apple obsession, you are going to adore these tips for picking the best apples and these awesome apple recipes I am crushing on this year.

Tips for Picking the Best Apples


  • Pick apples from the outside of the tree first, as these will be the ripest.
  • Select apples that are firm to the touch.
  • Fragrant apples are also a good sign of freshness.
  • Avoid bruises, nicks and apples that have fallen to the ground, as these may have insects feasting inside!
  • If an apple isn't quite ripe, it won't ripen more after picking. 



Now that you know what to look for in apples as you are picking them, let's get on to more important matters, what to make with these lovely apples!

Homemade Cherry Orange Soda Pop Syrup

Homemade Cherry Orange Soda is light, refreshing and perfect for sipping. It comes together with only a few ingredients to make a gourmet soda that you won't be able to get enough of.

We have a  Drink Mate in the kitchen and I vowed to put it to use this summer. I made a delicious Strawberry Peach Soda recipe a few weeks ago and I couldn't wait to make more fizzy drinks.  The neighborhood kids were more than happy to be my taste testers, so I started experimenting.

This is such an easy homemade soda pop recipe. If you are not using a soda machine like the drink mate or soda stream, you can make this work with club soda.

Supplies:

1 orange
1/2 pound of pitted fresh cherries
1 cup of sugar
1 cup of water
Mesh Strainer

Directions:

Combine fruit, water and sugar in a saucepan.
Over medium heat bring to a boil.
Reduce heat and allow the fruit syrup to simmer for 20 minutes.
Pour through a mesh strainer.
Allow the syrup to cool.
Discard fruit (This is wonderful over ice cream if you are so inclined.)




Soda directions:

Carbonate filtered water.
Add 2 ounces of cherry orange syrup per 8 ounces of carbonated water (or club soda) to ice.



If you want a stronger, sweeter soda increase the syrup from 2 to 3 ounces.



My family loved this. The kids liked the sweet, juicy, bubbly flavor. I loved that it was a caffeine free option and that I know what is in it, and that I can control the sweetness of this soda.


I served this on a hot day, with lots of ice. My husband mixed a little vodka into his and declared it to taste like summer should.


If your family loves this, next time double or triple the batch for the syrup. You can store it in a mason jar in the fridge for a few weeks.


When pitting your cherries, a cherry pitter is a handy tool to have. If not you can find other ways to get the job done. I sliced mine in half to make smashing the fruit even easier.

Jalapeno Popper Biscuit


Jalapeno Popper Biscuits are like the best of both worlds! Fluffy bread and creamy jalapeno poppers combined into one awesome starter that you will serve time and time again!



Jalapenos become a big part of my diet in the summer! I visit the farmers market every week, and how can you resist buying a basket of peppers for $1? I am always looking for unique ways to use them up. I had a can of refrigerated biscuits and the idea of cheesy, spicy bread lured me in!

This recipe is so easy. Seriously! So, easy! It has all of the flavor of bacon wrapped jalapeno poppers, with a tasty, flaky crust!


Ingredients

1 can of refrigerated biscuits
5 jalapenos, chopped
4 ounces of cream cheese, softened
1/4 pound of bacon, cooked and crumbled
3/4 cup of shredded cheddar cheese

Directions


Preheat oven to 350
Flatten the biscuit dough, with a rolling pin into  4 or 5 inch circles.
In a small mixing bowl combine the peppers, cream cheese, 1/2 cup of cheddar cheese and crumbled bacon.
Fill the center of the dough circles with the cheese mixture, use a generous spoonful for each biscuit.



Fold the remaining dough round around the filling. 
Sprinkle the top with remaining cheddar cheese.
Bake for 12 to 15 minutes, or golden brown.

Little known fact, once upon a time I spent a summer rolling pretzels at a flea market. It was a long time ago but I still think about how lucky I was to eat nothing short of 100 pretzels that summer! I loved them plain, with and without salt. Sauteed corn and squash makes for the perfect addition to any summer meal. It is delicious enough to make a meal on its own! Made with fresh and simple ingredients, this dish comes together in a matter of moments and is going to get rave reviews from anyone that samples it!



Summer is here you guys! I have never been so happy to hit the farmers market! After a long winter with access to a sad selection of fresh veggies, to see food grown with care and pride inspired my stomach and my menu planning.



I made the easiest dish for dinner last Sunday. It was a lazy summer day. The kids had been playing outside most of the day and I turned to my farmers market finds to create dinner. This recipe is so easy you guys it makes only 3 ingredients and the prep time is minimal, so you can spend more time making summer memories.



Chefs notes:
Use real butter. Butter is something that should not be sacrificed in any kitchen. I firmly believe that using butter to cook is healthier than turning to some scientifically created food like substance. Butter- just do it guys. 

At the last moment, I tossed roughly chopped fresh parsley into the veggie mix to add a splash of green and a little extra flavor. This is optional

Ingredients

1 yellow squash
2 ears of corn on the cob
2 tablespoons of real butter
parsley to taste (optional)


Directions

Shuck your ears of corn 
Cut the corn from the cob
Chop the squash into chunks
Heat a skillet at a a medium heat setting
Add butter
Add corn and squash
Add parsley if desired
Sautee for about 20 minutes, stirring frequently. When your squash is tender you can remove from the heat and serve.



I served this along with garlic roasted asparagus for a delicious dinner that was extremely delicious and healthy. It offered a colorful plate packed with summer veggies! This is one of the many ways we love to enjoy summer squash.

This dinner was so economical. It is one of the many examples of the reality that you can eat wholesome and healthy foods even on the tightest of budgets.  I always hear people claim that it costs too much to eat healthy. Recipes like this dispel that myth. While I didn't add meat to the meal- you could easily do so if you desired.
