Chocolate Covered Marshmallow with Coconut

We had another snow storm on Saturday of last week. While I watched the snow blowing from my window I decided to make a dessert that would take no more than 5 minutes to prepare and that would give us a little taste of the tropics to ease the pain of another winter storm.

To make Chocolate Covered Marshmallows with Coconut you will need:

1/2 a bag of milk chocolate chips
2-4 tablespoons of shredded coconut depending upon your preferences (completely coated, partially coated etc)
10 jumbo marshmallows
Cooking Spray


Start by spraying a microwave safe bowl with cooking spray.
Add chocolate chips to the bowl. 
Place your coconut in another small bowl.
Microwave for 30 seconds, stir and repeat until the chocolate chips are melted and smooth.

Dip a marshmallow in melted chocolate. Roll it in the coconut, set aside on a wax or parchment paper lined plate. Allow to harden, about an hour. You can speed this up by placing the marshmallows in the refrigerator for about 20 minutes.

Donut Balls

Sometimes you want something incredible for dessert, but who has time to whip up something from scratch and then bake something?! I mean it is summer. Why heat up the house when you can create these sweet, easy and pretty little treats in no time at all.




These were a huge hit with my family. My husband could not believe I made these with store bought ingredients. I will definitely be making these again- in different flavor combinations for sure!

Donut Balls



Ingredients



1 box of donut holes (about 30) I used glazed original
1 tub of Cool Whip, thawed SAVE the CONTAINER! YOU will use it again!
1/3 cup plus 1 tablespoon of milk
1 box of instant pudding mix I used French Vanilla 


Instructions



Mix the milk and the pudding mix, it will be kind of like a blob of pudding. 

Add the Cool Whip and blend well. I used a low setting on a hand mixer and mixed for a minute or so. 
Return the pudding mixture to the Cool Whip container and place it in the freezer for 10-20 minutes.
Make a thin slice on one side of the donut hole.
Then slice in half. 
The slice that is cut on both sides becomes the bottom, separate the 'tops' and 'bottoms'. 
Repeat until all donut holes are ready.
Remove the mixture from the freezer, place a dollop on the 'bottom' section of the donut hole, gently pressing the 'top' section on the pudding mixture.
Serve immediately or refrigerate until you are ready to serve.

These are pretty , easy and delicious!
Next time I will try chocolate pudding and donuts!

Peanut Butter Waffle Cake


Peanut Butter Waffle Cake is the solution to summertime baking dilemmas. You can have your cake without heating up the house with this incredibly easy recipe.





A few weeks ago my daughter and I made birthday cake waffles because we wanted to try it out. We are funny like that, we get an idea and we almost have an itch to discover what might happen as a result! We had so much fun making cake waffles that we had to do it again!
This cake begins with a white cake mix and becomes a layered, moist cake that no one can resist! Best of all, you can make this cake in just about 15 minutes from start to finish!
We knew we couldn't go wrong with peanut butter. It is the one thing our family can agree on usually! We are crazy for peanut butter chicken and of course, peanut butter pie, so peanut butter waffle cake was the natural choice for a unique dessert!

Ingredients:
1 white cake mix
1/2 cup smooth peanut butter
3 whole eggs
1 cup of water
Directions:
Combine the ingredients and mix well. 
Heat your waffle iron and pour the cake batter in, preparing as you would a waffle.
Allow the cake waffles to cool, as they are, mix up the peanut butter frosting.
Ingredients for frosting:
4 cups of powdered sugar
1/2 cup of smooth peanut butter
1 to 2 tablespoons of milk or heavy cream
Directions:
Add powdered sugar, peanut butter and 1 tablespoon of milk to a mixing bowl and blend with a hand mixer until smooth and creamy. Add another tablespoon of milk if needed. 
After the cake waffles are cool, begin layering the waffles and the frosting. Generously top the last waffle with remaining frosting and serve.

Gourmet Homemade Oreo Marshmallows

It was one of those days, the cupboards were growing bleak, the need to grocery shop was strong, but the interest wasn't there. I knew I could put it off another day. {Face it, shopping with two young children is not fun!}

After whipping up an easy peasy dinner, I knew that dessert was in order too. I had 3 ingredients on hand and this little bit of yum is what I came up with!





To make Oreo Marshmallows you will need:
White Chocolate
Oreos
Marshmallows

First melt your white chocolate in the microwave, stirring every 25 seconds or so until it is smooth.
Crush Oreos, place in a bowl.
Dip your marshmallow into the melted chocolate, immediately dip it into crushed Oreos. 
Set aside for about 25 minutes until the chocolate has set.
Enjoy!


My family loved these! They were soft, sweet and had bits of crunch thanks to the chunks or Oreo cookies. This was an incredibly easy treat to make with a gourmet flavor perfect for kids of all ages!

Fresh Blueberry Napoleons

If you need a yummy dessert to take to your 4th of July festivities you won't want to miss this recipe for Fresh Blueberry Napoleons. Imagine something fruity, sweet and rich that will leave your loved ones talking about your amazing baking skills... 



Ingredients

  • 6 slices firm white sandwich bread, crusts removed
  • 1 teaspoon butter, softened
  • ¼ teaspoon sugar
  • 1 cup ricotta cheese (whole or part-skim milk or cottage cheese)
  • ¼ cup mascarpone or cream cheese
  • ¼ cup confectioners’ sugar
  • 2 tablespoons apricot preserves
  • 1 cup blueberries

Instructions

  1. Preheat oven to 350°F
  2. With a rolling pin, roll bread slices very thin
  3. Cut each slice in half lengthwise
  4. Lightly butter bread on one side
  5. Arrange on baking sheet
  6. Sprinkle wtih sugar
  7. Bake until crisp and beginning to brown, about 10 minutes
  8. Cool to room temperature (If making ahead, wrap tightly store at room temperature)
  9. In medium bowl, with electric mixer, beat ricotta, mascarpone, confectioners’ sugar, and preserves until smooth
  10. Cover and refrigerate until ready to use
  11. Just before serving, place 8 toasts on work surface
  12. Spread cheese filling on toasts, dividing evenly
  13. Dot with berries
  14. Stack 4 of the prepared toasts on remaining prepared toasts
  15. Top each with a plain toast
  16. Press gently to secure
  17. Place each on a serving plate
  18. If desired, sift confectioners’ sugar over Napoleons
  19. Serve immediately

 With technology at our fingertips, it's hard to tear families away from their gadgets and get them outside. But unplugging and spending time together in nature have tons of benefits for both children and adults. Peanut Butter and Jam Pound Cake Parfait Inspired by Hagensborg Chocolates

 This recipe was inspired by friends at Hagensborg via samples received. 

A few weeks ago, I partnered with my friends, The Chocolate Princesses at Hagensborg Chocolates to bring you a really sweet giveaway! We loved hearing all of the ways that you guys are making the world a sweeter place. It was truly inspiring!

Last week was rough for my husband. Mr. Sweet Silly Sara was wrapping up the year at his job as a school librarian and he had not been getting enough sleep. We were busy every night of the week and despite his long week and his weariness, he was on a baseball field, volunteering to help coach a team of 3-6 year old kids.  I  was inspired by Hagensborg Chocolate truffle pigs in peanut butter and jam flavor to make a sweet dessert that would bring a smile to my husband's face.

This is such an easy recipe. I normally would have baked a sponge cake to use, but as I mentioned we had several weeknight games! With that in mind, I had picked up a sponge cake to serve with berries one evening. The berries were consumed but the cake was stashed in a cabinet and forgotten about for a few days.

I put the cake to good use and created a 5-minute recipe that anyone can make and will love!


Peanut Butter and Jam Pound Cake Parfait Inspired by Hagensborg Chocolates

Ingredients

4- 2 inch slices of pound cake, cut into cubes
2 tablespoons of raspberry jam
2 tablespoons of peanut butter
1 tablespoon of cold water
4 Hagensborg Truffle Pigs in Peanut Butter and Jam flavor
Chocolate sauce for garnish

Directions

In a small bowl mix the jam and the water together
In a small saucepan melt the peanut butter over low heat, stirring often until it reaches a smooth liquid state
Place several cubes of cake into a parfait cup
Add a spoon full of jam to the top of the cake cubes
Add another layer of cake cubes
Add a spoonful of melted peanut butter to the top of the cake cubes
Drizzle Chocolate Sauce, jam and peanut butter over the top layer
Garnish with a Hagensborg Chocolate
Repeat until the ingredients are gone in additional parfait cups
