Throw Together Chili with Farmer's Pantry Cornbread Crisps

It is May.... my furnace is still kicking on in the mornings and again throughout the evening! One day last week I felt that a pot of chili was in order, but I was ill prepared to make it. I had very limited ingredients. I didn't let that stop me and I made a quick pot of Throw Together Chili. This was an economical and delicious dinner- and it was easy! Best of all, this made 2 dinners!

My Throw Together Chili cost $8.30 for 2 dinners and took really only a few minutes of effort.

I used about 1/2 pound of lean ground beef; this cost $2.25
4 cans of tomato soup $3.36 {4 cans at .79}
I had about 1/2 an onion in the freezer- I always freeze the veggies I can't use immediately for dishes like this. {FREE}
I used about 1 1/2 tablespoons of chili powder {all I had... ill prepared as I mentioned} and 1 teaspoon of ground red pepper { a few cents... not worth calculating!}
I offered cheese to top the chili with 4 ounces was about .89
Instead of crackers we used Farmers Pantry Jalapeno Cornbread Crisps $2 for a 2-ounce bag

total of $8.30
cost per meal $4.15 {4 servings}

I served cantaloupe on the side with the Throw Together Chili with both meals. Cantaloupe was on sale for $1.29 a melon- which added about 65 cents  to the total of each meal.  You can't beat a meal for a family of 4 that tastes amazing for under $5!!

Throw Together Chili
A quick chili made with simple ingredients.

Ingredients
  • 4 cans Condensed Tomato Soup
  • 1/2 pound lean ground beef
  • 2 1/2 cups water
  • 1 1/2 tablespoon chili powder
  • 1 teaspoon ground red pepper
  • 1/2 cup cheddar cheese, shredded
  • 1 bag Farmer's Pantry Cornbread Crisps
Instructions

Cook lean ground beef until browned and cooked thoroughly.Drain any fat.Break beef into small pieces.Place beef into a soup pot.Add onion and sautee.Add 4 cans of tomato soup to the beef and onion mix.Add 2 1/2 cups of water to the soupAdd the chili powder and ground red pepper.Stir well.Heat on medium heat for about 20 minutes, stirring regularly.Serve topped with shredded cheese and Farmer's Pantry Cornbread Crisps.

  30. Love the shortcuts to get a quality comfort food done quickly. I see that some restaurants add shredded tortilla chips to their Mexican entrees to give it a bit more crunch.
