Crab Cakes Recipe Made With John Wm Macy's Cheesesticks

Crab Cakes are the things that my seafood dreams are made of.  I cannot resist  them! I have 2 recipes that I like to use when I make them at home! But, this time, I switched things up and added my favorite snack of all times {John Wm Macy's Cheese sticks!} to the mix. What I created was nothing short of incredible. This recipe comes together in a flash, is packed with delicious flavors and it always leaves me wishing for leftovers for breakfast the next morning!

We live in Ohio. Our access to fresh seafood is seriously limited. Luckily, both Kroger and Meijer carry good brands of canned claw meat. I prefer to use blue crab in this recipe as I like the flavor it offers. You can use whatever variety of crab meat you have access to.  In a pinch I have used imitation crab meat {if that is what you can get, by all means go for it!}




Crab Cakes with John Wm. Macy Cheesesticks.


Ingredients
8 ounces of blue crab claw meat
1 egg
3 tablespoons of mayonnaise
2 tablespoons of honey mustard
2/3 cup of John Wm. Macy Cheddar Cheese sticks; crushed finely
1/4 cup sweet onion chopped finely


Cooking Directions

Heat a skillet over medium high heat. Add a 1/2 teaspoon of butter at a time to the skillet. {Add more as needed.}
Mix crab meat, egg, mayonnaise, mustard and onion together. Stir well.
Add 1/2 cup of John Wm. Macy Cheese stick crumbs and mix well.
Shape your patties by hand.
Coat the crab cakes in the remaining cheese stick crumbs
Place in hot skillet, frying until golden brown

The honey mustard in this recipe offers a touch of sweetness to the crab cakes which totally makes them crave-worthy! If there is left over butter left that wasn't used for frying I might add a tiny touch of it to the top of the hot crab cakes to enhance the flavor even more!

I used original cheddar in this recipe, but John Wm. Macy's has so many amazing flavors. Any of them would be amazing in this recipe. The Asiago and Cheddar variety will definitely be going in this recipe soon!

Unique Nacho Recipes

 Are you looking for some easy meal ideas to get dinner on the table in a flash? Lately I have been LOVING nachos! The whole family will eat them without complaint, and there are so many ways to prepare them. You could serve nachos every week without repeating a recipe if you really wanted to!



I don't know about you, but just thinking about all of the cooking I have ahead of me in the coming weeks is enough to leave me overwhelmed. I like Thanksgiving; who can resist pie and turkey with all of the trimmings? But. Hear me out. I am over cooking these epic feasts already! I never want to eat it after cooking all morning, and the mess is enough to make me want to cancel dinner and stay in bed.

This year, I am going to give myself a BREAK before Thanksgiving and take the easy out for as many meals as possible. My meal plan for the month includes some very basic plans like soup and grilled cheese, crock pot chili, and of course, we are going to have nachos a few times.



I gathered some of the recipes I want to try the most to share with you. These are unique and easy. I am sure your family will love them all.

Coconut Rice Krispie Treats Recipe {Dairy Free}

Earlier this week I needed to make a snack to share with little boys. I thought I would go with a standard favorite and make Fruity Pebble Treats until I realized margarine has milk in it and I needed a snack that was free of milk and chocolate.

I started a batch of a nutella type Rice Krispie Treats... then I realized after adding the Jif version of Nutella that oops this has chocolate in it... It was irrelevant anyways because the recipe was a total flop. 

I scanned my pantry and came up with coconut oil as an ingredient a little more digging searching produced a bag of coconut flakes...

So, I created a recipe that is free of milk and chocolate for my dears that face food allergies. I wasn't sure how they would turn out so I used {Mr.} Adam as a guinea pig. He said they were good but that they were too adult for kids. I shrugged my shoulders and said "I am okay with that because I tried."

Imagine how thrilled I was to hear from the Moms a few days later that the Coconut Rice Krispie Treats were a hit and that several Moms thought they were lovely! So here is the recipe, I hope you like it too!

Coconut Rice Krispie Treats {Dairy Free}
Dairy Free Rice Krispie Treats with a delicious coconut flavor!
Ingredients
  • 4 1/2 cup Rice Krispies
  • 10 ounces Marshmallows
  • 2 tablespoons Coconut Oil
  • 1/3 cup Coconut Flakes
  • as desired Sprinkles
Instructions
Spray a baking dish with coconut oil spray as well as a pan.Add 2 tablespoons of coconut oil and 10 ounces of marshmallows to the sprayed pan. On medium/low heat melt the oil and marshmallow. (This took about 3 minutes, be sure to stir frequently)
When the marshmallows and coconut oil melt add 4/1/2 cups of Rice Krispies and 1/3 cup of coconut flakes to the pan, stirring until the cereal is well coatedSpread the mixture into the prepared baking dish.Add sprinkles.Allow to cool for one hour.Cut into squares and serve.

Tips for the best egg rolls


  • For a crispier egg roll, fry them in batches and do not overcrowd the pan.
  • If you are using frozen egg roll wrappers, thaw them according to the package directions.
  • You can also bake the egg rolls instead of frying them. Preheat the oven to 350 degrees F (175 degrees C). Place the egg rolls on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until golden brown and crispy.

3 Ingredient Fool Proof Biscuits

There is nothing like fresh biscuits! We love them with almost any meal, and both of my kids love to come home from a long day at school to find a basket of fresh biscuits to hold them over until dinner. This recipe is so easy that you can have a small batch of fresh biscuits ready and on the table in about 15 minutes, with only 3 ingredients!


I love to bake something fresh everyday. I do it for a bunch of reasons; out of love, boredom and necessity. Anytime I can whip up something fresh instead of turning to processed food, count me in. This biscuit recipe is so good and easy. It is truly foolproof. You can't mess this recipe up, even if you try! This is a recipe an inexperienced baker can enjoy, but even the most seasoned biscuit baker will appreciate the simplicity of this recipe!


Ingredients:
2 cups of self rising flour + a little extra for dusting
a pinch of salt
1 1/2 cups of heavy cream




Directions:
Combine all ingredients in a medium sized mixing bowl.
When the ingredients are combined, pull the dough out of the bowl and knead it by hand for about 2 minutes. You do not want to overwork this dough! That is the secret to fluffy, flaky biscuits.
Roll the dough out to about 1/2 an inch thickness.


Using a mason jar lid or biscuit cutter, cut the dough into circles and place them on a baking sheet.



Bake at 400 degrees for 8 to 10 minutes.
If you like, brush the tops with melted butter when they come out of the oven.


Serve warm, with butter and jam.


You can store any leftovers in an airtight container and pop them in the microwave for about 15 seconds to reheat.


This biscuit recipe is really good for being so fuss free. It pairs perfectly with my copycat Cracker Barrel Chicken and Dumplings. It would also be fantastic with carrot soup.

Apple, Strawberry, Banana Baby Food Waffles #CookingwithGerber

Moms, baby cereal is a part of life during the early years of a child's life. We have all mixed it with fruit, spooned it into mouths and cleaned it out of hair! But, did you know that even after your child is past the baby cereal stage, there is a good reason to keep it in the pantry! I have been around the block of picky eating a few times now, my daughter will eat anything and everything, my son, however, is incredibly picky. His famous line is "That makes me weird..." when he is offered almost any kind of food. He will eat waffles, pancakes, chicken and potatoes... you can imagine how I worry about his nutritional needs! At the age of 6 he is growing and developing. He is active and plays sports, the mom in me needs to know he is getting some essential nutrients in his selective eating phase.

Last week I whipped up a fantastic and easy recipe with Gerber Oatmeal and Banana Baby Cereal and Gerber baby food {apple strawberry banana stage 2}. This was so easy to make and my son had NO CLUE I slipped some added goodness into one of his favorite foods.



If you are looking for a healthy recipe with added nutrients that is an awesome and hearty breakfast in its own, you are going to love my recipe for Apple, Strawberry, Banana Baby Food Waffles!



Ingredients
2 cups of all-purpose baking mix
1 cup of Gerber Oatmeal and Banana Baby Cereal
1 container of Gerber Apple strawberry Banana 2nd foods
2 1/2 to 2 2/3 cup of milk
1 banana sliced finely
1 egg

Directions
Add baking mix, Gerber baby cereal, egg and banana together, lightly stir to smash the banana.
Add the apple, strawberry, banana baby food to the mixture, stir lightly
Begin to gradually combine the milk and the waffle mix. When you reach the desired consistency, stir the batter well to smash up any larger chunks of banana.
Add to your waffle iron and cook until done.
Serve warm with syrup or sliced fruit.

My son really loved these fruity waffles. The fruit flavor was not overpowering which is awesome for parents of picky eaters! If your child likes fruit, you could reduce the milk by 6 ounces and add an additional container of baby fruit food.

Absolutely YUM Christmas Spice Fruit Cake

 To me, nothing says Christmas louder than a warm kitchen wafting smells of baking. With Christmas just around the corner, I have been trying out recipes for Christmas dinner feast. In addition to the traditional options, I was looking for an alcohol free version of fruitcake that I could serve to my younger guests and by Jove, I think I’ve found it!!! After trying several variations to the recipe, I’m absolutely stoked to share the recipe of this absolutely delicious spiced fruit cake. This is an ideal cake for Christmas, loaded with fruit, nuts, and spices that pack this cake with deliciousness! I have made it twice and it has been polished off both times before it has even had time to cool properly.



I have made a few minor tweaks to the original recipe by Omana Paul. I got it from a friend who called it “plum cake” which wasn’t fair since this recipe has no plums in it. It comes together quickly and tastes divine. One tip before you begin though, I had to throw out an entire batch because I cracked an egg directly in my batter and the egg was bad. Always crack your eggs in a separate bowl, or do the egg float test to check for freshness before you start a recipe.

For the cake:

white sugar 3/4 cup

room temperature butter 2/3 cup

eggs 3

Plain flour 1 cup

chopped nuts (cashews, almonds, or walnuts) 1/2 cup

black raisins 1/4 cup

mixed dried fruit (dates, cherries, orange peels) 1/2 cup

cinnamon powder 1/2 tsp

clove powder 1/4 tsp

baking powder 1 tsp

vanilla extract 1 tsp

Salt 1/8 tsp

For the syrup:

white sugar 1/2 cup

WHAT TO DO:

Make the syrup. Melt half a cup of sugar in a pan on low heat till it turns into a dark caramel colour. Don’t let it burn. But make sure you don’t let it burn. Turn off heat and add about 1/4 cup water. The sugar will crystallize and harden. Put it back on the heat for about 10 minutes or until the sugar crystals dissolve. Cool and set aside.

Pre-heat oven to 350F / 180C.

Mix 3 tbsp. flour to the dry fruits and nuts. Dredge completely to coat them. This will prevent them from sinking to the bottom of the batter while baking. Put aside.

In a separate bowl mix remaining flour with the baking powder, spices, and salt.

Whip the butter together with the 3/4 cup sugar until fluffy. Incorporate the vanilla and one egg into the batter.

Then mix in a bit of the flour mixture. Then add another egg. Repeat alternating between the eggs and flour till they are all used up.

Add in the cool caramel and fruits and gently fold in.

Pour into a greased cake pan and bake until a skewer inserted into the cake comes out with dry crumbs, about 45 minutes to an hour.

Dust with icing sugar after the cake has cooled.
