11 Truffles to Make

The path to my heart is paved with decadent things; soft pillows, sweet smelling flowers,  a warm animal to pet and truffles are a few of the things that can turn me to a puddle of mush!


This holiday season I have intentions to make and share some amazing truffles with my friends and family. You know what they say about intentions, so it is debatable whether my truffles will actually be shared, or if I will over indulge and then act like I didn't make any... HA!

Veggie Pizza

Summer is here! I am perfecting my recipes for cold meals that will satisfy the family. I don't want to turn on the oven for any longer than necessary, and that makes this the perfect recipe for the hottest days!

My tip is to prepare the crust early in the morning. This gives it plenty of time to cool and you won't need to swelter with the added heat of the oven in the afternoon.



To make Veggie Pizza you will need

One can of crescent rolls
Ranch Dip
Raw veggies (We used carrots, broccoli and sugar snap peas)
Shredded Cheese 

Unroll the crescent rolls. Make some sort of odd shaped crust with them on a cookie sheet. 

Poke lots of holes in the dough with a fork. 

Bake at 350 for about 8 minutes until the crust is flaky and golden.

Allow to cool completely.

Spread about 3 tablespoons of ranch dip onto the crust.

Top with veggies of your choice.

Sprinkle on cheese to taste.

Cut into squares and serve cold.


This recipe is a great side, main dish, or appetizer at a party. You can use any veggies you like, which makes it a great recipe for varying taste buds!

The Perfect Dish for Summer Sauteed Corn and Squash

Sauteed corn and squash makes for the perfect addition to any summer meal. It is delicious enough to make a meal on its own! Made with fresh and simple ingredients, this dish comes together in a matter of moments and is going to get rave reviews from anyone that samples it!



Summer is here you guys! I have never been so happy to hit the farmers market! After a long winter with access to a sad selection of fresh veggies, to see food grown with care and pride inspired my stomach and my menu planning.



I made the easiest dish for dinner last Sunday. It was a lazy summer day. The kids had been playing outside most of the day and I turned to my farmers market finds to create dinner. This recipe is so easy you guys it makes only 3 ingredients and the prep time is minimal, so you can spend more time making summer memories.



Chefs notes:
Use real butter. Butter is something that should not be sacrificed in any kitchen. I firmly believe that using butter to cook is healthier than turning to some scientifically created food like substance. Butter- just do it guys. 

At the last moment, I tossed roughly chopped fresh parsley into the veggie mix to add a splash of green and a little extra flavor. This is optional

Ingredients

1 yellow squash
2 ears of corn on the cob
2 tablespoons of real butter
parsley to taste (optional)


Directions

Shuck your ears of corn 
Cut the corn from the cob
Chop the squash into chunks
Heat a skillet at a a medium heat setting
Add butter
Add corn and squash
Add parsley if desired
Sautee for about 20 minutes, stirring frequently. When your squash is tender you can remove from the heat and serve.



I served this along with garlic roasted asparagus for a delicious dinner that was extremely delicious and healthy. It offered a colorful plate packed with summer veggies! This is one of the many ways we love to enjoy summer squash.

This dinner was so economical. It is one of the many examples of the reality that you can eat wholesome and healthy foods even on the tightest of budgets.  I always hear people claim that it costs too much to eat healthy. Recipes like this dispel that myth. While I didn't add meat to the meal- you could easily do so if you desired.

Making homemade lemonade is super easy to do! I have a few tips to help you make the best ever lemonade at home!


  1. 5 or 6 lemons will yield 1 cup of juice.
  2. Select lemons that are bright yellow and firm.
  3. Washing lemons after purchase will keep them fresher longer.
  4. Room temperature lemons will yield more juice than a cold lemon.
  5. Simple syrup is much easier for making lemonade than dissolving sugar.

Cherry Berry Pie

Blackberry Cherry Pie is sweet and tart and incredibly crave-able. My recipe includes these fantastic little dough balls for a delicious addition to this lovely pie!

I picked up some little boxes of blackberries over the weekend. I had this vision of baking an out of season pie to change up the flavor pace in my kitchen. Then, as I was indulging in a spot of champagne over the weekend, those lovely berries crossed my mind. How decadent would it be to float plump blackberries in some beautiful bubbly? Let me tell you, it was dreamy... but it also left me short on berries for my pie.
I was still craving a blackberry pie, with dough balls, but I do not kid anyone with a mini pie. A good pie is a pie that you can share! A mini pie is not share-able!
I surveyed my kitchen and found 2 cans of cherry pie filling. I thought it over. I like cherries and berries. I like pie. Yep, this was destined to be. Luscious, fresh blackberries sprinkled with sugar and blended with cherry pie filling. 

Ingredients:

2 boxes of blackberries
2 pie crusts
1/3 cup of sugar

Directions:

Combine your clean blackberries and sugar. Stir and allow to sit for a moment.
Place one pie crust in a pie pan, form small balls of dough with the other and drop these in the pie crust.
Combine your cherry pie filling and sugared berries, stir.
Pour the fruity mixture into the pie crust, over the dough balls. Bake for 25 minutes, or until the crust is golden brown.
This easy pie can be made with pre-made or homemade pie crust. You could leave the dough balls out, but that is the BEST part of the pie in my opinion!

Best Blueberry Pie Recipe

I am going to make a confession to you guys today. I am borderline obsessed with baking pies. You guys probably already know how I feel about blueberries... yep an addict. I cannot get enough of them! It seemed only natural that I would share a favorite Blueberry Pie Recipe with you!

This pie comes together easily, especially if you use a premade pie crust. While I have a few unbelievable pie crust recipes, sometimes life with 2 little kids gets crazy busy. I take a helping hand where I can get it, and Pillsbury is always willing to shave a few moments off for me by producing lovely premade pie crusts!




Ingredients

  • 1 refrigerated pie crust
  • 4 cups blueberries
  • ½ cup sugar
  • 2 ½ tablespoons cornstarch
  • 1 tablespoon butter
  • ½ teaspoon grated lemon peel


Instructions


  1. Roll out one sheet pie crust to flatten. Fit into a 9-inch pie dish.
  2. In a medium saucepan combine 1 cup of the blueberries, sugar, cornstarch and 2 tablespoons water. Bring to a boil; cook and stir until mixture is thickened and clear. Stir in butter; cool for 5 minutes. Stir in the remaining 3 cups blueberries and lemon peel.
  3. Preheat oven to 400 degrees. Turn cooled filling into pie shell. Lay the remaining pie crust on a sheet of wax paper. Roll out to flatten. With a knife or pastry wheel cut pastry into 3/8-inch wide strips. Arrange in a criss-cross pattern on top of blueberries, pressing ends into the edges of the bottom crust and crimping to seal.
  4. Place pie on a baking sheet. Bake in the bottom third of oven until crust is golden and filling bubbles gently, about 30 minutes. Cool on rack.

Homemade Rice Pudding

This rice pudding recipe comes together in about 35 minutes and will impress your family in ways that the pre packaged variety of this classic dessert could only dream of!

If you like rice or pudding, you are going to love this recipe for homemade rice pudding! It comes together easily and creates a deliciously economical dessert that your family will love!

I usually purchase Rice Pudding in a container and feel content with it, but a few days ago, I was inspired to try my hand at making it myself. The process was simple and the results were marvelous!

Cooks Tips

  • I used long grain rice. If you have another variety, feel free to use it and adjust the cook time.
  • You can use raisins or craisins in this recipe if you like. 
  • I like to top my rice pudding with cinnamon, brown sugar makes a sweet addition too!
  • This dessert serves deliciously both warm and cold!
  • If you like it cold, store in a sealed container for up to 3 days, if it lasts that long!




Ingredients:
3/4 cup uncooked white rice
2 cups milk, divided
1/2 cup of sugar
1/4 teaspoon salt
1 egg, beaten
1 tablespoon butter
1/2 teaspoon vanilla extract

Directions:
Bring 1 3/4 cups water to a boil in a saucepan; stir rice into boiling water. Reduce heat to low, cover, and simmer for 20 minutes.

In a clean saucepan, combine cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 18 minutes.

Stir in remaining 1/2 cup milk and beaten egg; cook 2 minutes more, stirring constantly.

Remove from heat and stir in butter and vanilla.

Top with cinnamon or raisins if desired. Serve warm or cold, per preference.

Red Velvet Pancakes with Cream Cheese Frosting

This red velvet pancake recipe is nothing short of decadent. Light and fluffy but packed with the flavor of my a favorite cake, these are even better than the IHOP version!



Pancakes are a perfect start to the day because they are easy to make, they are economical and they are delicious! This recipe is perfect for occasions like Valentine's Day but also they are a go to recipe anytime you need a scrumptious start to the day!

Ingredients

Pancakes

2 cups Original Bisquick mix
2 tablespoons granulated sugar
1 1/2 tablespoon unsweetened baking cocoa
1cup milk
1 1/2 teaspoons red food color
2eggs

Cream Cheese Topping

4 oz cream cheese softened
1/4 cup butter softened
3 tablespoons milk
2 cups powdered sugar

In medium bowl, beat cream cheese, butter and 3 tablespoons milk with electric mixer on low speed until smooth. Gradually beat in 2 cups powdered sugar, 1 cup at a time, on low speed until topping is smooth. Cover; set aside.

In large bowl, stir all pancake ingredients except powdered sugar with wire whisk until well blended. Heat griddle or skillet over medium-high heat (375°F).  Spray with cooking spray before heating.

For each pancake, pour  1/4 cup batter onto hot griddle.

Cook 2 to 3 minutes or until bubbles form on top and edges are dry. Turn; cook other side until golden brown.

Spoon cream cheese topping into resealable food-storage plastic bag; seal bag. Cut off tiny corner of bag; squeeze bag to drizzle topping over pancakes.

Garnish with raspberries or strawberries if desired.

Mini Taco Pizzas

Mini Taco Pizzas make a perfect throw together dinner! These are ideal for those challenging times when one must decide if they want tacos or pizza; now you can have them both in just a few steps!


I have been on a taco kick lately! I swear we have been having tacos 2 times a week for 2 months now. My family is starting to get a little weary of the constant offering of chicken tacos, traditional tacos or maybe my favorite, breakfast tacos!

I decided to change things up a little and combine a few favorites; fresh veggies, seasoned taco meat, and a cheese to create a hearty and easy dish that gave my family what they craved; pizza while still giving me that taco flavor I can't get enough of!

This recipe comes together easily. The hardest part is resisting the delicious aromas that will fill your house as they are baking!



Ingredients:
One can of jumbo biscuits
One pound of cooked ground beef, taco seasoned
4 ounces of cheese
Chopped Onion
Chopped Lettuce
Sliced Peppers
Tomatoes {optional}
Sour Cream {optional}
Taco Sauce {optional}

Directions:
Flatten the biscuits, so that they nearly triple in size.
Sprinkle a little cheese on each biscuit.
Top with Taco Meat and remaining cheese.
Bake for 10-12 minutes until the biscuit crust is golden brown.
Top with peppers, lettuce, onion, tomato and sour cream, then serve.


This recipe makes 8 pizzas.

Fried Beef Rolls

Fried Beef Rolls are an awesome afternoon snack, appetizer, or lunch! These are so easy to make that they are sure to become one of your favorite easy recipes!


I found a great deal on egg roll wrappers (25 cents a package!!) so I had to make something with them. A quick glance in my fridge and these are the ingredients I settled on.
  • Slow Roasted Roast Beef
  • Bacon Cheddar
  • Egg Roll Wrappers
  • Vegetable Oil

Directions:
  1. Layer 2 slices of roast beef and one slice of cheese into an egg roll wrapper.
  2. "Tuck" the ends in, then roll the wrapper.
  3. Brush with water to seal.
  4. Repeat as desired for additional fried beef rolls
  5. Heat 1 to 2 cups of vegetable oil in a medium size pot over medium heat, then drop the beef rolls into the oil carefully.
  6. Allow to cook for about 3 minutes, or until crispy and golden brown, then turn and cook an additional 2 to 3 minutes.
  7. Allow to drain on paper towels to reduce the grease.



After I made a few with beef and cheese, and my family declared them delicious. I tried adding a pickle to the center. It was awesome and reminded me of Cuban sandwiches in a way.

Tropical Fruit Boats

Making food interesting to a picky eater takes patience and creativity. My son Roo is going through the phase of eating only specific foods (chicken fingers, applesauce, yogurt, cheese quesadillas). I am trying to help him experience a variety of food and enjoy eating it... Which hasn't gone well... If he lays eyes on cucumbers, he will hide. When I eat carrots, he cries for me to stop...

I am taking the approach of healthy eating to a new level by making food fun.

What could be more fun and appealing than this Tropical Fruit Boat?






Ingredients:
  • 2 cups fresh blueberries
  • 3/4 cup blueberry or grape juice
  • 2 bananas
  • 1/2 cup watermelon cubes (1/2-inch)
  • 1/2 cup pineapple cubes (1/2-inch)
  • 1 cup mango cubes (1/2 inch)
  • 2 fruit roll-up sheets, any flavor
  • 4 thin pretzel sticks, each 4 inches long
Directions:
  1. In each of 4 shallow bowls, place ½-cup blueberries and 3 tablespoons juice.
  2. Cut each banana in half crosswise on a diagonal, then split halves lengthwise.
  3. In the center of each bowl, arrange 2 banana slices to form the sides of the “boat.”
  4. Evenly divide the watermelon, pineapple and mango in the banana boats.
  5. To make the boat “sails,”: on a cutting board, lay one fruit roll-up sheet over the other and press together; cut the double layer into 4 triangles.
  6. Make 3 small cuts along one edge of each triangle; thread onto pretzel sticks.
  7. Push the pretzel sail into a fruit cube.
  8. Serve immediately.

Black & Blue Pancakes With Krusteaz

My family loves breakfast! Every other weekend we go to breakfast together. My husband likes scrambled eggs, my daughter likes biscuits. My son, he is a sausage guy. Me? I like runny eggs and toast. But there is one food we can all agree on. And it is not uncommon for me to make a huge batch of pancakes on a whim and feed them to my family as breakfast, lunch or dinner, or sometimes a combination of the three.

This week has been a very busy one. So busy in fact that I have not made it to the grocery store yet. After looking in an empty refrigerator and an empty freezer I considered my options... We could order out. But we do pizza way too often...

I had a few boxes of Krusteaz Pancake and Waffle Mixes in my cabinet. On a whim I came up with a delicious pancake that was as easy to make as 1,2,3.




Black & Blue Pancakes

2 cups of Krusteaz Blueberry Pancake Mix
1/2 cup of crushed black walnuts
1 cup of water
1/3 cup of milk


Mix ingredients well. Let the batter rest for about 10 minutes. 
Heat your griddle to 325 degrees. Spray with cooking spray.

Pour 1/4 cup portions of batter onto the griddle.
Flip when the bubbling of the batter slows.
Cook for an additional minute.
Serve warm, with butter and your choice of syrup.





My family really liked these fluffy, nutty, fruity pancakes! This recipe is a keeper. My husband liked the strong nutty flavor that black walnuts offer, but if you do not like the intense flavor of black walnut, feel free to use regular walnuts, finely chopped.
