Delicious Vegan Breakfasts

If you are looking to make breakfast a meatless affair this summer, I know you are going to enjoy this collection of Delicious Vegan Breakfast recipes. This collection has something for everyone!  From an easy casserole that is loaded with healthy veggies, to a twist on the always popular avocado toast that puts garden fresh zucchini into the mix. You are going to want to save this list for later because it has so many tasty recipes included!

I love to shop at the farmers market in the summer. Every Tuesday, I get my cash from the atm, grab my cute little fishnet market bags and an insulated Thirty One tote and head over to my favorite market. I buy the veggies and fruits we will eat that week, and I buy another weeks worth to freeze for the winter. Adam and I love to have big, fresh salads for dinner, and the kids love mini peppers and radishes as a fresh from the garden side that requires very little prep on my part.

This year, we are hoping to add more plant based ingredients to our breakfasts too. These recipes will certainly help!

Busy Moms' Guide to Easy, Delicious Dinners

Culinary success can be a daunting task for busy moms. With the chaos of everyday life, it's easy to forget about meal planning and preparation. But a tasty dinner doesn't have to take hours in the kitchen or require expensive ingredients. Here are some tips to help busy moms get delicious dinners on the table without breaking a sweat!

Meal Plan:

Meal planning is essential for busy moms looking to save time and energy in the kitchen. Not only does it help organize meals ahead of time, but it can also help save money by avoiding multiple trips to the grocery store.

Meal planning doesn't have to be complicated or take a lot of time; even committing 10-15 minutes a week can make a big difference in how quickly dinner can be on the table. Moms can create a list of favorite meals and plan their weekly dinners around ingredients that are already in the pantry and fridge.

Planning ahead also helps keep food waste at bay and prevents last-minute decisions that often lead to unhealthy options. Also, meal planning allows moms to get creative with their cooking and explore new recipes without risking wasting precious ingredients if they don't turn out as expected.

Keep it Simple:

When it comes to dinner time, simple is always better. Eating a meal doesn't have to be an elaborate or complicated affair; some of the best dishes are made with just a few ingredients. For example, this easy recipe for instant pot chicken and rice requires only a few ingredients and is ready in just 30 minutes.

Simple meals can also be healthier; relying on fresh produce and wholesome ingredients often creates much more nutritious meals than ones that rely heavily on processed foods. Minimizing the number of ingredients in a dish also cuts down on costs since fewer groceries have to be purchased.

Easy dinners don't have to mean sacrificing flavor, either! There are plenty of ways to make basic dishes exciting, such as adding spices, herbs, marinades, or sauces to inject new flavors into familiar recipes. Combined with some simple sides such as roasted vegetables or a green salad, any busy mom can whip up a tasty dinner that her family will love!

Don't be Afraid of Frozen Food:

Frozen food gets a bad rap, but it can actually be a busy mom's best friend. Frozen food can be just as nutritious as fresh, and it often lasts much longer in the freezer. In fact, many frozen fruits and vegetables are flash-frozen at their peak of ripeness, meaning they maintain more nutrients than produce that has been sitting on a store shelf for days or weeks.

Frozen ingredients also take out all of the hassles of preparation; there's no need to chop or peel anything! This makes putting together dinner lightning quick; just dump some frozen veggies into a skillet, and dinner is good to go. For an even faster meal, look for pre-packaged frozen meals that can be heated up in minutes.

By following these tips, busy moms can whip up tasty dinners without spending hours in the kitchen. From meal planning to using frozen food, there are many ways to make dinner time simple and stress-free. With a little bit of planning and preparation, busy moms everywhere can enjoy delicious meals that are sure to please even the pickiest eaters!

Crumbl Copycat Golden Graham Cookies

Looking for a really good cookie recipe? These golden graham cookies are just what you need. They have such a lovely flavor and are perfect for anyone who loves cereal and milk. These are even better than Crumbl cookies! I think it is safe to call these a copycat crumbl recipe.

I love to bake cookies, muffins, biscuits and even popovers. It is my dream to someday have a bakery of my own where I can spread cheer and cookies all around.

Well, until that happens, I keep myself happy coming up with recipes like this one. It is perfect for creating huge, delicious cookies with a wonderful texture. These are so big you can only make 6 to a cookie sheet and you will need your ice cream scooper to form them!

Bake these for a friend, to share with family or for a bake sale, and prepare for compliments! Go on and pin this recipe for later because you are going to want to make these all the time!

.

1 c salted butter, softened to room temperature

1 ½ c sugar

2 large eggs

2 ½ c flour

½ tsp baking soda

½ tsp baking powder

1 ½ c crushed golden graham cereal

1 tsp vanilla extract

½ tsp cinnamon

Preheat the oven to 350 degrees.

Line a cookie sheet with a silicon baking mat or parchment paper.

Add butter and sugar to a medium mixing bowl. Beat for 2-3 minutes or until light and fluffy.

Add eggs and vanilla, mix for 1 more minute.

Add baking soda, baking powder and cinnamon. Mix for 1 minute.

Add flour and mix until you can’t see any flour in the dough.

Crush the golden graham cereal with a food processor.

Add the crushed cereal to the dough and mix for a minute

Use an ice cream scoop to make large dough balls.

Place them 6 to a cookie sheet.

Bake for 13-15 minutes or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for 10 minutes.

When the cookies are completely cool you can add glaze or frosting to them.

Garnish with golden graham cereal.

Glaze

1 ½ c powdered sugar

¼ c softened butter

1 tsp vanilla extract

1-2 tbsp of half and half of milk.

Add the powdered sugar and butter to a mixing bowl.

Add vanilla and 1 tbsp of milk or half and half.

Begin mixing.

If your glaze feels too thick add an additional tbsp of milk and continue to blend until you achieve the desired consistency.

These cookies are SO GOOD. I think they are even better than CRUMBL cookies!

These would be incredible for a cookie exchange, or to add into your cookie tray at the holidays. But, these are awesome anytime of the year. So don't wait for the holidays to roll around to bake this recipe.
