Pumpkin Streusel Cookies

 Pumpkin Streusel Cookies: A Cozy Fall Delight

When fall arrives, it brings with it the irresistible flavors of pumpkin, cinnamon, and warm spices. If you love pumpkin treats but want something a little different, pumpkin streusel cookies are the perfect solution. These cake-like cookies have a soft, tender crumb and are topped with a buttery streusel that adds a delicious crunch—making them a must-have for the season.

Pumpkin is the star of autumn baking, providing a naturally sweet and earthy flavor that pairs beautifully with warm spices like cinnamon, nutmeg, and cloves. Not only does pumpkin add great taste, but it also brings moisture to baked goods, ensuring a soft and tender texture in every bite.

The Magic of Streusel Topping

The addition of a streusel topping takes these cookies to the next level. A simple mix of butter, sugar, and flour creates a crumbly, slightly crisp layer that contrasts beautifully with the soft, cake-like base. The result? Ingredients


Glaze

1 c brown sugar

2-4 tbsp milk

1 tsp vanilla


Topping:

6 tbsp melted butter

¾ c brown sugar sugar

¾ c flour

2 ½ tsp pumpkin pie spice


Cookies

1 ¾ c flour

1 c sugar

6 tbsp softened butter

1 egg

½ c pumpkin puree

1-2 tbsp pumpkin pie spice

½ tsp baking soda

½ tsp baking powder

A pinch of salt


Make the topping by combining all of the ingredients and mixing together.

Preheat the oven to 350 degrees

Line 2 baking sheets with parchment paper



In a stand mixer, add the butter, sugar and pumpkin pie spice, baking soda and powder. 

Blend on low/medium  until combined. The mixture should look crumbly.

Add the egg and mix until smooth.


Before adding the pumpkin to the mix, you should pat it dry on a paper towel. Pumpkin puree holds a lot of liquid; skipping this step will lead to a runny dough. Simply place the puree on a paper towel and fold it over the top. Let it rest for a few moments, and scrape the puree off of the paper towel into the mixing bowl.

Blend the pumpkin into the batter by mixing on medium for 1 minute.

Add the flour and pinch of salt.

If you are a serious pumpkin spice fan, like I am, you might want to add a little more pumpkin pie spice to the batter at this time. 

Mix until well blended.

Place the dough in the fridge to allow it to rest for  10 minutes.

Scoop the dough with a cookie scoop or ice cream scoop if you want huge cookies.

Place the cookies on a cookie sheet 3” apart.

After placing the cookies on a baking sheet, use a spoon to make a little indentation on the top, then sprinkle the topping directly in that place.

Bake for 12-14 minutes for a 2 tablespoon cookie scoop or 18-22 for an ice cream scoop sized cookie.

Allow to cool for 30 minutes.


Mix the glaze by adding 2 tablespoons of milk, vanilla and brown sugar to a bowl and whisking it until it is smooth. If the glaze feels too thick to drizzle you can add the additional milk, a splash at a time until you achieve the desired consistency.

Pumpkin pudding no bake cookies

Makes 3 dozen


Ingredients:

½ cup of butter

2 cups of sugar

⅔ cup of milk

1 tsp vanilla

4 ½ c of quick cook oats

1 box of instant pumpkin pudding (3 ounce box)

A pinch of salt





Directions:

Line your countertop with foil or parchment paper.

In a medium saucepan combine butter, sugar and milk.

Bring to a rapid boil, over medium high heat.




As the mixture begins to bubble and boil, begin stirring continuously.

As the mixture comes to a rapid boil that you cannot stir away, set a timer for 1 minute.

Allow to boil for one minute.

Remove from heat.

Add vanilla, oats and instant pumpkin pudding.




Stir to combine.

Drop by the spoonful onto the lined work area.




 

Allow the cookies to dry for 90 minutes before removing.

Store in an airtight container for up to 5 days.

Glam Pumpkin Make Over

From outrageous orange to golden glam in a flash! This is how to make those plastic pumpkins super stylish!



I was browsing at the local thrift shop a few weeks ago and I noticed they had a huge pile of Halloween stuff out. Everything was 10 cents. I sorted out about 10 plastic pumpkins and happily took them home. 

I grabbed some gold spray paint and gave them a generous coat. I let them dry throughout the day, and now I have some total glamorous pumpkins to display! It may be only August, but I am ready for a super stunning and stylish Halloween display this year!


You might want to wear gloves when you spray paint... I got a little too enthusiastic about the idea and I just went for it. My hands were a lovely shade of gold too. HA!


How am I going to use these glam pumpkins in my Halloween and fall decor?
Make sure you come back in a few weeks to peek at the final results. 
But:

I am thinking to have hubby drill a hole in the bottom of a few and use them to plant mums.
I am going to stack 3 together and create a fall totem pole of fun. I am looking for Rose Gold and bronze spray paint to add to the colorful display!

Mumkins

Over the weekend I scored a great deal on mums. They were not in the best shape, but they were $1 for a big bunch! The farmer also had some lopsided pumpkins priced to move, and an idea that I have loved but never got around to trying popped into my head.

Out of my bargain shopping, a mumkin was born.

This was such an easy project! All you need are:
A pumpkin
Some mums
A drill with a 7/16th bit

Simply drill holes into your pumpkin, be generous with your holes!

Snip the mums to be about 2" long, insert them into the holes you drilled.

And there you have a mumkin!



This is a perfect activity for preschoolers. I made one live on the Quirky Mama page with Harper and we had a ton of fun with it! I loved that making a mumkin gave her a chance to work with natural materials and to use her fine motor skills in the process.

The mumkin is a very chic and classy option for Halloween decor without going the route of spooky and scary! I can't wait to make more with the kids!
