Chicken Salad Recipes to Cluck For

I have been on a chicken salad kick lately. It is an easy lunch, it tastes great, and there are so many economical ways to make it! I guess it is easy to see why I am clucking for chicken salad these days!

I have found some awesome recipes that I can't wait to try, and I know you are going to love them too! I had no idea there were so many yummy ways to make this lunch time staple. I also have a few tips to help you make the best chicken salad!


  • Poached chicken breast is the best option for making chicken salad, but you can use a rotisserie or canned chicken if that makes it easier for you.
  • Allow your chicken to cool, no matter how you cook it! Wait until it is cool to add it to the other ingredients.
  • Cover your chicken salad tightly to keep it fresh while stored in the fridge.


Some of the best chicken salads I have ever made have been on a whim. Made by surveying what ingredients I have on hand and making them work for me. However, these all look superb and I will be modifying my shopping list to make these happen in my lunchtime future!

Crock Pot Chicken and Dumplings

 There's nothing quite like a comforting bowl of chicken and dumplings on a chilly day. But who has the time to slave over a hot stove? This crock pot version is here to save the day (and your energy)!



This recipe is not only easy but also endlessly customizable. In the mood for something a little heartier? Throw in some frozen vegetables along with the chicken. Craving a bit more herbaceous flavor? Add some fresh thyme or rosemary to the pot.


Here's what you'll need:




Ingredients

½ onion, diced 2-3 chicken breasts 1 teaspoon kosher salt 1 teaspoon pepper 1 tsp garlic powder 1 tsp Italian seasoning 1 can cream of chicken soup 2 (14 oz) cans chicken broth 1 can instant biscuits 1 (16 oz) bag of frozen peas and carrots



Directions

Add onion, chicken breasts, salt, pepper, garlic powder, Italian seasonings, chicken broth and cream of chicken soup to the crockpot.


Cook on HIGH for 4 hours. Using a fork, shred the chicken by moving your fork around in a circular motion. Add frozen peas and carrots and stir.


Chop biscuits up and layer across the top.

Cook on HIGH another 2 hours. Serve warm and enjoy.




Notes If you over cook during the second half, the biscuits can begin to brown or burn against the side of the crock pot.


All crock pots/slower cookers do not heat the same. If at the 4 hour mark you need to add more liquid, do so, to avoid burning later.

Here are some tips for perfecting your crock pot chicken and dumplings:

  • Don't overcrowd the crock pot. This can lead to uneven cooking.
  • Shred the chicken before adding the dumplings. This will ensure the dumplings cook through without getting mushy.
  • Use a spoon to distribute the biscuits evenly in the pot. This will help them all cook through at the same time.


This recipe is a little different from my cracker barrel copycat chicken and dumplings. I wonder which you will prefer? I can't make a decision. I love them both!

I can't resist Chinese take-out! I mean, who can? It is so easy to place an order and swing by to pick it up after a long day when you don't really feel like cooking. Grilled Chicken: 10 Delicious Ways

Fall might be here, but in my mind, that makes it the ideal time of year to fire up the grill! There is something special about gathering outdoors on a crisp evening and chowing down on some grilled chicken that I can't resist!

Peanut Butter Chicken {$7 Dinner Series}

Summer is creeping up on us. For my family, that means all 4 of us are home for 3 months.  Sounds fun right?! It is, if you can take the increased cost of living out of the equation. My water and electric bills sky rocket over the summer, we spend about 3 times more on gasoline in the summer. My grocery bill makes me want to cry. With my husband and son eating all 3 meals at home for 3 months it more than doubles every week. We haven't even got on the subject of entertaining the family, the sports and so on.

This summer, I am going to reign in our spending. I am taking that depression inducing grocery bill on first. I have made it my mission to discover the recipes that taste amazing and are economical too. I am giving them a bonus star if they can be prepared without use of the oven.

This has led me to start a little series over here called the $7 Dinner Series. I will be featuring recipes that you can make for your family for under $7 that will earn cheers instead of jeers for budget cooking!

I love peanut chicken from the Chinese Restaraunt, but taking the family out for dinner every time I crave Peanut Chicken is definitely not budget friendly! Luckily, I came up with an incredibly easy and delicious alternative.

Before you groan at the thought of eating peanut butter coated chicken, let me tell you, this is incredible. It is such a scrumptious combination. If you try it, you are going to like it. I promise!



This meal features fresh veggies and chicken. To give you a run down on the cost

I purchased a 2.5 pound bag of store brand chicken tenders for $5.47 I used 1/2 of the bag for this recipe to feed 4 people. That made the cost of chicken for this recipe $2.74.

I had peanut oil on hand.

I used about 1/3 of a cup of peanut butter this would add about 45 cents to the price of dinner.

Asparagus was on sale for 99 cents a pound.

Sliced mushrooms were on sale for $1.09

I used about 1/3 of a stick of butter which would add about 30 cents to the price of dinner.

That brings this meal for 4 to $5.57.

My husband says it is even better than take out, and seriously I couldn't go out for Peanut Chicken solo for $5.57!


Ingredients Needed for Peanut Butter Chicken With Asparagus and Sauteed Mushrooms


1 1/4 pound of frozen chicken tenders
1/3 cup of smooth peanut butter
3 tablespoons or so of peanut oil {you can use vegetable oil if that is what you have on hand!}

1 pound of asparagus, fresh with trimmed ends
2 1/2 tablespoons of butter

1 cup of sliced mushrooms
2 1/2 tablespoons of butter

Salt and Pepper as desired


Directions 


Preheat your oven to 350 degrees.

Place mushrooms in a frying pan with butter over medium heat. Allow to cook, stirring as needed until the mushrooms have a lovely golden brown color to them.

Place your trimmed asparagus on a baking dish. Add butter to the top of the asparagus and sprinkle with salt and pepper if you wish. Place this in the oven to roast for about 15 minutes.

Begin to fry your chicken tenders in peanut oil at a temperature of about 300 degrees. {I use a wok}

As the chicken has fried and reached the recommended temperature of 165-170 degrees remove it from the pan or wok and cut it into smaller chunks.

 Discard oil remaining in wok/pan after it has cooled down a touch.

Return chicken chunks to the pan/wok, turn to a medium heat setting.

Add the peanut butter to the wok.

Stir as it melts, make sure the chicken is coated.

Remove mushrooms and asparagus from heat and serve with the  Peanut Butter Chicken!


This is such a great recipe. It is delicious, it cooks easily and quickly and it is economical. You really can't beat it!

Baked Cracker Crumb Chicken Nuggets

Chicken nuggets are always nice, but this easy as 1,2,3 recipe gives a classic dinner time offering a wonderful texture and the perfect crisp. This is sure to be a new favorite for your family.  



I love easy dinners, and I love to serve chicken. I often buy breasts in large packages and freeze them for later. This is one of my kids favorite ways to have a hearty, yet healthier meal on a busy night. I never complain about making these for them either because they are so easy to make, and create very little mess!

Ingredients:

1 pound of chicken breast

1 sleeve of your favorite crackers


Directions:

Prepare a baking sheet by lining it with parchment paper and lightly spraying with cooking spray.

Preheat the oven to 375 degrees.

Cut the chicken into 2” cubes.


Crush the crackers into a fine dust and pour them into a bowl.

Rinse the chicken lightly, just enough to get the chicken wet.

Now place the chicken into the cracker crumbs and roll until the chicken is completely coated.



Place the chicken nuggets on the prepared baking sheet, about an inch apart.

Bake for 13-15 minutes or until cooked thoroughly.

Enjoy!



We like to serve these cracker crumb nuggets with fries, or fruit salad.
These are a great way to get kids excited about nuggets that didn't come from a drive thru!

Shredded Chicken Tacos are our favorite easy meal. Toss 3 ingredients in the slow cooker and when you come home you will have an awesome family meal waiting on you.



If it were up to me, we would eat tacos all of the time. They are easy, versatile and so tasty, no matter how you make them. My husband has to reign me in sometimes with my enthusiasm for tacos, but he never complains about these easy Shredded Chicken Tacos for dinner.

I love these because they are effortless and they taste just as good as the ones from the little local restaurant down the street from my house and they are one of those dump and go dinners. Let the crock pot do all of the work for you.

This recipe starts with frozen chicken breasts and end with fresh and flavorful tender chicken. I like to make this with the 3 pound bags of frozen chicken breast, for a good amount of chicken tacos for meal prepping and leftovers.



Ingredients:
3 pounds of frozen chicken breast
1 can of cream of chicken soup
1 16 oz jar of salsa
2 cups of water

Directions:
Place 2 cups of water in the slow cooker
Add 3 pounds of chicken breast
Pour a jar of salsa into the slow cooker.
Add a can of cream of chicken soup.
Cover and cook on low for 8 hours.
Before serving give it all a good stir to shred the chicken.
Serve with toppings of your choice. I like panella cheese crumbles, avocado, fresh cilantro and a little lime.
Store leftovers for up to 5 days in the fridge.
This shredded chicken meat is awesome in quesadillas and on nachos too!

In a medium saucepan add olive oil and chicken breast strips. Cook over medium heat for about 4 minutes or until cooked through.

Preheat the oven to 350 degrees.

Roll out the puff pastry and cut into triangle shapes. You want to get about 8 triangles from 1 sheet. 

Layer chicken and bacon onto 4 of the triangles of puff pastry.

Add a wedge of brie and a generous pinch of shredded gruyere or swiss cheese.

Top with the remaining 4 triangles of dough and press the edges together, like you might a pie crust.

Bake for 15 to 20 minutes or until the puff pastry is golden brown.

Serve immediately. Refrigerate any leftovers.




Tips for Success:

  • Thaw the puff pastry completely: This will prevent it from tearing when you fold it.
  • Don't overfill the turnovers: Leave a little space around the edges for sealing.
  • Let them cool slightly: The filling will be very hot right out of the oven. Allow them to cool for a few minutes before devouring.
