10+ Gingerbread Treats

It wouldn't be the holidays without a delicious gingerbread goodie! I have rounded up ten of my favorite gingerbread treat recipes from bloggers to share with you in case you need a gingerbread treat to savor and share this holiday season.




My late friend Ruth Seeshultz made the best gingerbread cookies ever. I can't help but think of her whenever I run across a good recipe for any kind of dessert. During the holidays, she seems to always be on my mind, as there are so many goodies I know she would have wanted to make!




This collection has something for everyone, from gingerbread candy houses to gingerbread cupcakes that are so moist and flavorful! Any of these treats are perfect for a party or to share with a friend!

Easy Dipped Shortbread Fingers



Spring is here and that means it is time to pack dinner into a picnic basket as often as possible and head out for an al fresco meal with the kids! We usually take cookies along on these occasions for dessert, but last week, I wanted to take that to the next level of delicious.

Walker's Shortbread is the natural choice for my family, we love the buttery flavor of shortbread, but spring days require something super special; after all, we are celebrating the return of feathered friends, the sunshine, and shorts, and we are sending our bulky coats back to the closet from which they came!


Within a few moments time, I took our favorite shortbread to new heights with 3 simple ingredients and very little effort! To make our picnic a nutty sweet affair after the meal had ended I offered my family Walker's Shortbread dipped and drizzled with white and dark chocolate and coated in crunchy walnuts. This was maybe the best ending to a meal that I have ever whipped up in under 3 minutes!



To begin, I laid out parchment paper and spread my shortbread fingers on it.

Next, I melted a fine brand of  White Chocolate and a decadent brand of dark chocolate. I drizzled the melted goodness directly on to my shortbread.

Next, I sprinkled on chunks of raw walnuts and followed up with the dark chocolate.

Allow this to cool and harden for about 30 minutes. If you are in a rush, pop the cookies in the freezer for 10 minutes.

Serve or store in a sealed container for up to 4 days.

Rice Krispie Treats: 5 Ways

My family holds the opinion that there should always be treats in the cookie jar... I am not much of a baker but I can meet them in the middle and hook up Rice Krispie style treats on a moments notice. Thanks to all of the awesome bloggers that link up with us at Tell Me About It Tuesday I have an array of yummy recipes to try out on my family and I couldn't resist sharing a collection of Rice Krispie Treat recipes.

Instant Pot Banana Rice Pudding

 

My family loves rice pudding and I often make it in the instant pot. But, we had some over ripe bananas and I thought maybe, I could put them to use in the pudding we all love so much. And let me tell you, this is one of my most delicious ideas yet!




This is such an easy recipe. You can have it ready in minutes if you like it warm, but if you like it cool, no worries! Just give it a little time to rest and cool.

This is a great recipe to keep on hand because it is cheap to make, and it tastes like a million bucks when you dig into it. It is a great way to stretch your grocery budget by adding in affordable rice to your desserts. Plus this no bake goodie won't heat up the house on a hot day.




Ingredients:

1 c white rice

1 ½ c water

2 cups of milk

½ c sugar

2 overripe bananas

1 tsp vanilla






Add rice and water to the instant pot.

Seal and select high heat.

Set the timer for 3 minutes.

It will take about 10 minutes before the timer begins to countdown.

When the timer beeps, turn off the instant pot. 

After 10 minutes, quick release the steam.



Add milk and sugar.



Stir.



In a small bowl, smash the bananas and add vanilla and cinnamon.




Pour this into the rice.

Turn the instant pot to saute, and allow to cook until it comes to a boil. 




Remove the liner from the instant pot and allow to cool and thicken.

Serve warm or cold, with cinnamon sprinkled over the top and sliced bananas if you like.

Store leftovers in an airtight container in the fridge.

Makes 6 servings.

Nilla Wafer Bark

 

Make this no bake Nilla Wafer Bark the next time you crave a sweet that is soft, crunchy and delicious! It is made with common pantry staples to make a fast candy that everyone is sure to love.
This recipe is so easy you might want to get the kids in the kitchen to help you prepare this for a dessert to enjoy at home, or a treat to share with friends.


I love to make homemade bark. My husband Adam loves candy, so these kind of recipes are always a hit at home. This one is no exception; it is easy to whip up when you realize a sweet is needed, and no matter what you have on hand, I know you are going to come up with something totally tasty.




1 cup of white chocolate chips

1 cup of sprinkle white chocolate chips

1 cup of vanilla wafers

1 ½ c large marshmallows (or about 12)

½ tsp crisco or coconut oil



Directions:

  1. Line a baking dish with parchment paper.
  2. Add vanilla wafers to the baking dish.
  3. Add marshmallows to the dish.
  4. Melt white chocolate chips, sprinkle chocolate chips and crisco together over a double boiler, or in the microwave. Stir often. When the chocolate chips can be stirred smooth, remove from heat.
  5. Pour the melted white chocolate over the contents of the baking dish.
  6. If needed, stir everything around to completely cover with melted white chocolate.
  7. Stick in the refrigerator for about 45 minutes, or until the white chocolate has hardened.
  8. Cut into chunks and enjoy.
  9. Store leftovers in an airtight container.



Keep this easy recipe on hand for those times that the pantry is bare, or maybe you just crave candy but don't have the time to dash to the store. This also makes a great homemade gift to share at the holidays with a candy lover in your life.

Brown Sugar Overnight Oats

Breakfast has never been easier or tastier than it is with this simple Brown Sugar Overnight Oats recipe.



Some of the best things in life are simple; this recipe embraces that and plays on the goodness of pantry staples. I love that you can literally toss this together in under a moment for a no frills, but tons of flavor start to the day.

Ingredients
1 cup of old fashioned oats
1 cup of 1% milk
1/8 teaspoon of vanilla
1 tablespoon of brown sugar

Instructions
Combine all ingredients in a food storage container. Allow to sit in the fridge for at least 3 hours. Overnight is ideal.
Serve cold, or heated in the morning for a nutritious and delicious breakfast.

This recipe will last for 3 days covered in the fridge.

This easy patriotic parfait is perfect for a last minute dessert!

Crumbl Copycat Golden Graham Cookies

Looking for a really good cookie recipe? These golden graham cookies are just what you need. They have such a lovely flavor and are perfect for anyone who loves cereal and milk. These are even better than Crumbl cookies! I think it is safe to call these a copycat crumbl recipe.


I love to bake cookies, muffins, biscuits and even popovers. It is my dream to someday have a bakery of my own where I can spread cheer and cookies all around. 

Well, until that happens, I keep myself happy coming up with recipes like this one. It is perfect for creating huge, delicious cookies with a wonderful texture. These are so big you can only make 6 to a cookie sheet and you will need your ice cream scooper to form them!

Bake these for a friend, to share with family or for a bake sale, and prepare for compliments! Go on and pin this recipe for later because you are going to want to make these all the time!

1 c salted butter, softened to room temperature

1 ½ c sugar

2 large eggs

2 ½ c flour

½ tsp baking soda

½ tsp baking powder

1 ½ c crushed golden graham cereal

1 tsp vanilla extract

½ tsp cinnamon





Preheat the oven to 350 degrees.

Line a cookie sheet with a silicon baking mat or parchment paper.

Add butter and sugar to a medium mixing bowl. Beat for 2-3 minutes or until light and fluffy.



Add eggs and vanilla, mix for 1 more minute.

Add baking soda, baking powder and cinnamon. Mix for 1 minute.




Add flour and mix until you can’t see any flour in the dough.




Crush the golden graham cereal with a food processor.





Add the crushed cereal to the dough and mix for a minute


Use an ice cream scoop to make large dough balls.

Place them 6 to a cookie sheet.



Bake for 13-15 minutes or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for 10 minutes.

When the cookies are completely cool you can add glaze or frosting to them.

Garnish with golden graham cereal.


Glaze

1 ½ c powdered sugar

¼ c softened butter

1 tsp vanilla extract

1-2 tbsp of half and half of milk.


Add the powdered sugar and butter to a mixing bowl. 

Add vanilla and 1 tbsp of milk or half and half.

Begin mixing.

If your glaze feels too thick add an additional tbsp of milk and continue to blend until you achieve the desired consistency.






These cookies are SO GOOD. I think they are even better than CRUMBL cookies!


These would be incredible for a cookie exchange, or to add into your cookie tray at the holidays. But, these are awesome anytime of the year. So don't wait for the holidays to roll around to bake this recipe.
