Crumbl Copycat Golden Graham Cookies

Looking for a really good cookie recipe? These golden graham cookies are just what you need. They have such a lovely flavor and are perfect for anyone who loves cereal and milk. These are even better than Crumbl cookies! I think it is safe to call these a copycat crumbl recipe.


I love to bake cookies, muffins, biscuits and even popovers. It is my dream to someday have a bakery of my own where I can spread cheer and cookies all around. 

Well, until that happens, I keep myself happy coming up with recipes like this one. It is perfect for creating huge, delicious cookies with a wonderful texture. These are so big you can only make 6 to a cookie sheet and you will need your ice cream scooper to form them!

Bake these for a friend, to share with family or for a bake sale, and prepare for compliments! Go on and pin this recipe for later because you are going to want to make these all the time!

1 c salted butter, softened to room temperature

1 ½ c sugar

2 large eggs

2 ½ c flour

½ tsp baking soda

½ tsp baking powder

1 ½ c crushed golden graham cereal

1 tsp vanilla extract

½ tsp cinnamon





Preheat the oven to 350 degrees.

Line a cookie sheet with a silicon baking mat or parchment paper.

Add butter and sugar to a medium mixing bowl. Beat for 2-3 minutes or until light and fluffy.



Add eggs and vanilla, mix for 1 more minute.

Add baking soda, baking powder and cinnamon. Mix for 1 minute.




Add flour and mix until you can’t see any flour in the dough.




Crush the golden graham cereal with a food processor.





Add the crushed cereal to the dough and mix for a minute


Use an ice cream scoop to make large dough balls.

Place them 6 to a cookie sheet.



Bake for 13-15 minutes or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for 10 minutes.

When the cookies are completely cool you can add glaze or frosting to them.

Garnish with golden graham cereal.


Glaze

1 ½ c powdered sugar

¼ c softened butter

1 tsp vanilla extract

1-2 tbsp of half and half of milk.


Add the powdered sugar and butter to a mixing bowl. 

Add vanilla and 1 tbsp of milk or half and half.

Begin mixing.

If your glaze feels too thick add an additional tbsp of milk and continue to blend until you achieve the desired consistency.






These cookies are SO GOOD. I think they are even better than CRUMBL cookies!


These would be incredible for a cookie exchange, or to add into your cookie tray at the holidays. But, these are awesome anytime of the year. So don't wait for the holidays to roll around to bake this recipe.

Nashville Hot Chicken Fried Potatoes

Let me tell you about the tastiest way to make fried potatoes ever. If you like the flavors of Nashville Hot Chicken, then this is the place for you! These Nashville Hot Chicken Fried Potatoes are so good that you are going to crave them all the time. Luckily, they are easy to make and are a cheap and delicious side dish to so many dishes.

My son, sweet Rolf, is 12 years old now. He is only about 2" shorter than I am. His feet are twice the size of mine. He is so beautiful... but he has an appetite like no other. But, he is PICKY. I am always looking for ways to fill him up, and if I can get him to try something new, then that is wonderful. 

I tried this tasty and easy fried potato recipe for a side last week and my family loved it. Even Rolf. He has asked me to make these again already. You only need 5 ingredients to make these and they taste so good! Let me tell you how I made these.


Ingredients:
4 tablespoons of Nashville Hot Chicken Seasoning (I like The Spice Lab's version)
1/2 cup - 1 cup Buttermilk 
1/2 cup of flour
1 -2 large potatoes
Oil for Frying


Directions:
Slice your potatoes using a slicer like pictured above. You want them to be thin.


Pour the buttermilk over your potatoes. If you are only making one large potato, use 1/2 a cup. For more potatoes, add more buttermilk.


Add 2 tablespoons of Nashville Hot Chicken seasoning to the buttermilk.
Gently toss so that the potatoes are completely covered with the buttermilk and seasoning.
Allow to rest in the fridge for an hour.

When the hour has passed (this is so important for the flavor!)
Mix the flour and the remaining 2 tablespoons of hot chicken seasoning.
Stir.
Dredge the potato slices through the flour.


You can just make a single layer of potatoes on a plate or something as you work your way through the slices of seasoned potatoes.


Pour your oil into a saucepan. 
Heat over medium heat for a few moments until the oil is hot enough to fry. I am sorry, I have no idea what temperature I had this oil. I just know how to fry potatoes in oil after all these years in a kitchen. HA!
I guess, I would say, I treated it just like I would fried chicken?

When the potatoes were nice and crispy, and golden brown, I pulled them out of the oil to drain on a paper towel. Use a slotted spoon!

Repeat with remaining potatoes, and these are the end results.



They have that whole spicy chicken vibe, but they are just potato slices. 
They are SO GOOD! 
These would be great for satisfying a fried chicken craving on a potato budget.  But, they are also just a great way to make potatoes super enticing on the side of any meal.

Baked Cracker Crumb Chicken Nuggets

Chicken nuggets are always nice, but this easy as 1,2,3 recipe gives a classic dinner time offering a wonderful texture and the perfect crisp. This is sure to be a new favorite for your family.  



I love easy dinners, and I love to serve chicken. I often buy breasts in large packages and freeze them for later. This is one of my kids favorite ways to have a hearty, yet healthier meal on a busy night. I never complain about making these for them either because they are so easy to make, and create very little mess!

Ingredients:

1 pound of chicken breast

1 sleeve of your favorite crackers


Directions:

Prepare a baking sheet by lining it with parchment paper and lightly spraying with cooking spray.

Preheat the oven to 375 degrees.

Cut the chicken into 2” cubes.


Crush the crackers into a fine dust and pour them into a bowl.

Rinse the chicken lightly, just enough to get the chicken wet.

Now place the chicken into the cracker crumbs and roll until the chicken is completely coated.



Place the chicken nuggets on the prepared baking sheet, about an inch apart.

Bake for 13-15 minutes or until cooked thoroughly.

Enjoy!



We like to serve these cracker crumb nuggets with fries, or fruit salad.
These are a great way to get kids excited about nuggets that didn't come from a drive thru!

3 Ingredient Fool Proof Biscuits

There is nothing like fresh biscuits! We love them with almost any meal, and both of my kids love to come home from a long day at school to find a basket of fresh biscuits to hold them over until dinner. This recipe is so easy that you can have a small batch of fresh biscuits ready and on the table in about 15 minutes, with only 3 ingredients!


I love to bake something fresh everyday. I do it for a bunch of reasons; out of love, boredom and necessity. Anytime I can whip up something fresh instead of turning to processed food, count me in. This biscuit recipe is so good and easy. It is truly foolproof. You can't mess this recipe up, even if you try! This is a recipe an inexperienced baker can enjoy, but even the most seasoned biscuit baker will appreciate the simplicity of this recipe!


Ingredients:
2 cups of self rising flour + a little extra for dusting
a pinch of salt
1 1/2 cups of heavy cream




Directions:
Combine all ingredients in a medium sized mixing bowl.
When the ingredients are combined, pull the dough out of the bowl and knead it by hand for about 2 minutes. You do not want to overwork this dough! That is the secret to fluffy, flaky biscuits.
Roll the dough out to about 1/2 an inch thickness.


Using a mason jar lid or biscuit cutter, cut the dough into circles and place them on a baking sheet.



Bake at 400 degrees for 8 to 10 minutes.
If you like, brush the tops with melted butter when they come out of the oven.


Serve warm, with butter and jam.


You can store any leftovers in an airtight container and pop them in the microwave for about 15 seconds to reheat.


This biscuit recipe is really good for being so fuss free. It pairs perfectly with my copycat Cracker Barrel Chicken and Dumplings. It would also be fantastic with carrot soup.

Mint Chocolate Chip S'mores

S'mores are a summertime staple for good reason. They are incredibly delicious! This recipe takes the tastiness up a notch with the addition of mint chocolate chip to the equation for a melt in your mouth campfire snack!

Summer is here and my kids have been begging to make s'mores. Last weekend they talked their Daddy into building a campfire for them and they looked at me with big eyes, hopeful. Do we have any graham crackers?

Well, we didn't. But that didn't stop us from smashing some delectable ingredients together and creating something incredible Mint Chocolate Chip S'mores are gooey, chocolate-y and have a hint of crisp coolness from the mint, making them perfect for summer!


This recipe is so easy. It was created based on availability of what was in our pantry. We had a pack of Smash Mallows lingering from Easter, some single serve Chips Ahoy and snack size Hershey bars. I picked mint chocolate chip marshmallow because mint is my thing lately. I don't know if Smash Mallows are a thing you can get anywhere. Ingredients per 1 S'more
2 Chips Ahoy Cookies
Smash Mallow Mint Chocolate Chip 
Hershey Milk Chocolate


Directions:
Place a Hershey bar on one chocolate chip cookie
Roast a smash mallow mint chocolate chip
Smash it on the chocolate bar
Top it with the other cookie.
Enjoy!

End of the Rainbow Treat

If you are looking for a no cooking and no fuss snack that kids of all ages will love, this end of the rainbow snack is perfect! It has variety, and comes together so easily!

Under normal circumstances, if my kids requested this as a snack I would scoff! But, these days with the social distancing, lack of youth sports and all of the other oddities associated with the virus, life is anything but normal right now.


On one particularly rainy day, I thought the kids needed cheering up, and I surveyed my pantry to see what I could come up with. I had twizzlers, marshmallows and golden oreo's. I was inspired to make them these easy end of the rainbow treats. They were a big hit! I know your kids would love these for St. Patrick's Day, or anytime of the year.


Ingredients:

Rainbow Twizzlers
Golden Oreos
Mini Marshmallows


Directions:
Pour mini marshmallows into a clear container, I used wide mouth mason jars.
Add twizzlers in the order of the rainbow.
Top with a few Golden Oreos.


Serve immediately, or close the container to keep fresh.
